Banana Bread I

I would give this recipe 3 Stars as is. 5 + stars after I followed other user's suggestions and made the following changes: add 1/2 tsp baking powder, 1 tsp Vanilla and 1/2 tsp cinnamon and some chopped walnuts. I subsituted 1/2 the white sugar with brown sugar. I also added about 2 tbsp of canola oil to the recipe since I only had 2 bananas and was concerned about the bread not being most enough. I poured the batter into muffin pans (I used liners) and baked for 18 minutes. Perfect! By far the best banana muffins I've ever had!

Cajun Grilled Corn

This was a nice change from the usual corn on the cob. I removed all the corn husks first, mixed a little cajun seasoning in with the butter, then slathered the butter mixture on the corn, and then wrapped tightly with foil. I went easy on the seasoning because I didn't want it to be too pepper for the kids. I will definitely use more seasoning next time so I can get more of the Cajun flavor. I think I will also leave the husks on next time because my corn got a little too burnt. Maybe the husks will make a difference? Good recipe. I should have followed it more closely.

Marinated Spicy Pork Chops

Good flavor! I made a few modifications to the original recipe, as suggested by others. I decreased the soy sauce to 1/2 cup and added 2 more spoonfuls of brown sugar. I also increased the amount of chili sauce and added red pepper flakes because I wanted to really taste the "spice". I did not find the recipe to be too salty, it was just right. I will definitely make again.

Yummy Honey Chicken Kabobs

Suprisingly great! Much better than I expected from such a simple recipe. I followed the recipe exactly. I marinated the chicken and veggies together in a ziploc bag for 24 hours. My boyfriend did end up burning the chicken a bit on the grill since it was too dark outside to really see well, but even though they were crispy they still had an incredible flavor! Thanks for this recipe. I will definitely be making these again. My boyfriend could not stop eating the chicken! Hopefully we will not burn them next time. LOL.

Rempel Family Meatloaf

I would give this recipe 10 stars if I could! This is by FAR the best meatloaf I have ever had! I never thought it could taste so goo. I followed the recipe exactly, using the recipe submitter's added suggestion of just using the onion flakes from the soup mix. I used crushed cheez-its since I didn't have butter crackers. I also used a store brand steak sauce since I thought that the taste A1 Sauce would be too overpowering. Like some other reviewers, I added a glaze to the top of the meatloaf before baking - ketchup, a dab of steak sauce and lots of brown sugar. I will NEVER use another meatloaf recipe again! Never thought I would love meatloaf so much! Thanks so much for this recipe.

Famous Pork Chops

Here's what I did, using the popular recommendations of other reviewers: I pan-fried the pork chops for one minute on each side (to keep chops tender), dipped chops first in egg, then in crushed cheez-its (substitution for butter crackers). I then placed pats of butter around chops (halved the amount of butterin recipe) and then covered pan with foil. I cooked for twenty minutes on one side then flipped chops over. Removed foil for last 15 minutes. I followed all of the recommendations of other reviewers and still my chops were so mushy that NONE of the cracker coating stuck to them. What I was left with was plain, unseasoned porkchops. The only positive note I can make was that they were really tender! Didn't even need to use a knife... I don't know what I did wrong, but I was really disappointed with the way that my dinner turned out!

Chewy Chocolate Chip Oatmeal Cookies

These cookies are absolutely wonderful... I used mini m&m's instead of chocolate chips (since I didn't have any) and also added shredded coconut. Other than that I did not make any alterations to the recipe. I baked my cookies for about 15 - 16 minutes and they were nicely browned and crunchy. Excellent! I will definitely be offering to make these for the next party I am invited two. Two thumbs up to the chef!

Double Layer Pumpkin Cheesecake

Do not mess with this recipe! It is perfect as is. The only changes I made was to omit the ground cloves, since I didn't have any. If you would like to save a few extra calories, you don't even need to add the whipped topping! It's just as good without it. The only negative thing that I could possibly say was that the top "cracked" after I took it out of the oven. But who cares how it looks, the taste is what matters! YUMMM!

Brown Sugar Smokies

These are always a huge hit at my parties and family gatherings! They are a lot of work, but totally worth it. I always mix the brown sugar with just enough water to make it into a thick paste then pour the mixture over the top of the bacon-wrapped smokies. I then drizzle them with honey and pop them into the oven. Absolutely delicious!

Baked Sweet Potato Sticks

These sweet potato sticks were suprisingly good! I did add extra seasonings (salt, black pepper, season salt and garlic powder) to spice up the recipe though. Overall the recipe is a really good idea! I would have liked for the sticks to be a little more crispy, but I guess you can't expect to get that from oven cooking them.

Tantalizingly Tangy Meatloaf

I would definitely use this recipe again. The only changes I made were to add onion into the meat mixture (I add onion to everything!) and because I could not find pineapple preserves I just used canned crushed pineapple (the kind preserved in it's own juice, not syrup). Yummy!

Asian Coleslaw

This recipe was not one of my favorites. I found the mixture of peanut butter and cabbage to sound interesting, but tasted very bizarre. I must say that it was a waste for me to make because my family would not eat it. I guess that you really have to have a love for Asian flavors to enjoy this recipe. Was just a little too far out for me!

Di's Delicious Deluxe Deviled Eggs

I don't eat eggs at all, but going by my family's rave reviews, I would say that this recipe is the best! I served these eggs at a family gathering and they were gone in 10 seconds flat! The only change I made to the recipe was to add in a little yellow mustard to the mix for some extra zing. I would definitely serve these again.

This soup was delicious! Due to the fact that I didn't have any salsa on hand, I had to make a change to the recipe. Instead I added a large can of diced tomatoes, 1/2 cup of tomato sauce, garlic, green pepper and cumin to replace the salsa. I also did not have bouillion cubes, so I used a can of beef broth. Even with having to substitute the salsa, the soup was great! For someone who has kids and doesn't want the soup spicy, the plain diced tomatoes was a good substitution...

Carrot Cake III

Just perfect! My idea of heaven on earth... I served it at a family lunch and even had my male cousin say that it was the best he's ever had and that other carrot cakes are usually "heavy", but this one was moist and fluffy! Going by a few other peoples suggestions, I did cut down on the sugar in the icing and it was still great.

Cuban Ropa Vieja

This recipe is to die for! I can create a meal that tastes just like I've been to an authentic Cuban restaurant. The only suggestions that I would make are: 1. you don't need to go out and buy fresh cilantro, that will only go to waste in your fridge - the recipe is just as good without it!, 2. If you don't like too much of a tomato flavor, I would suggest using less tomato sauce and more beef broth. Either way, the recipe is great!
