About this Cook
I am married and the father of 5. I was raised in a family where the men did most of the cooking so its a natural for me to do the cooking and grocery shopping for my family. I love every aspect of food: selecting, preparing and presentation.
My favorite things to cook
I enjoy home style cooking the most.
My favorite family cooking traditions
Polish/ethnic dishes.
My cooking triumphs
I've been told I make the best "polish penicillin" (chicken soup) in the world. I also won a chili cook off contest recently, got the "peoples choice award". Everything's good!
My cooking tragedies
Not so much tragedies - more or less "oopsie's" and there's been a few. Who hasn't?

Chicken Salad Balsamic
The first time I made this exactly as written, hence the 4 stars. The second time I made these changes: 1.Used equal amounts of oil and vinegar. 2.Added a heaping tablespoon of honey. 3.Omitted the walnuts and added an equal amount of sunflower kernels. 4.Omitted the celery and added 1 cup of dried cherries. 5.Used two cups of apples first soaked in orange juice for two hours. I used a rotisserie chicken. Served it over a bed of romaine/iceberg lettuce mix with some baby spinach thrown in, and sides of tomatoes, cucumbers, radishes, and red onion. I served this at a luncheon along with “Zucchini Cornbread Casserole” also on this site and apple cake to a group of teachers at our school. It was a huge hit. Here is an exact quote from a thank you email I received later in the day. “That salad was KILLER! Perfect mix of sweet and tart, crispy and chewy. LOVED IT! Thanks so much, brother!”

Zucchini Cornbread Casserole
My rating is for the recipe exactly as given. The first time I took the advice of another reviewer, lightly salted the zucchini and squeezed out the excess water (big mistake) but didn't change anything else. Well it was way too dry and lacked flavor. There’s not a lot of liquid in the recipe to begin with. I made this for the second time yesterday with these changes: 1. DID NOT squeeze out the water from the zucchini. 2. Added a half cup of sour cream. 3. Added a third egg. I took this with the above changes to a church potluck and was inundated with requests for the recipe. It was fabulous – moist and very savory. It seems the recipe author intended for it to be moist hence the last part of the name “casserole”.

Carol's Chicken Salad
By far the best chicken salad recipe out there! I have made it quite a few times and always get rave reviews. My advice: • Use thigh and breast meat from a store bought rotisserie chicken. • Make sure the grapes are sweet. • Finely chop the celery and onion (fresh chives may be subbed for onion) • Coarsely chop the water chestnuts. • Don’t dice but coarsely grate the Swiss cheese. Serve this to guests and you will get a lot of requests for the recipe.
