Blue Cheese and Pear Tartlets
Looooove these! They're always a hit at parties, and the hardest part about making them is cutting up the pear - not so bad!

Hudson's Baked Tilapia with Dill Sauce
Not my favorite fish dish that I have ever made, but very good and very EASY. I will make it again. I used crushed garlic in the sauce instead of garlic powder.

Spinach and Pine Nuts
This is my favorite way to prepare spinach. I add golden raisins and salt to this recipe. If you are looking to cut down the fat, it is delicious without the pine nuts, too. (In which case I strongly encourage the raisins.)
