Slow Cooker Chicken and Dumplings
Very easy. Not a whole lot of labor involved. Turned out pretty well, though I learned that my crock pot is a bit small for the amount of default servings this recipe is for.

Chicken Rice Mexicana
Very very good. My roommate, who hates Mexican food, even liked these. I will definitely make them again.

Picante Chicken Rice Burritos
VERY VERY GOOD. I made this for my picky-eater boyfriend for his birthday, and he loved it. These were restaurant quality, and reheated well. Awesome recipe! I added green sauce.
