Peach Pie

Also first time pie baker. I didn't crumble the butter enough in the crust so it melted over the pan, but hey, that made it even more delicious. I didn't have all the peaches to use, but can see that it could've used them all because they cook down and flatten a bit. The flavor was delicious and I'll use this one again!

Strawberry Bread

I used about 3 cups of strawberries, sliced. Also, I subbed the oil for 1 cup of applesauce. Baked for 45 minutes and it was perfect! So delicious, moist and sweet.

Creamy Banana Bread

Oh, yum. I love this recipe. I didn't make the brown sugar filling or use the pecans, but the bread is just scrumptious and moist as is, light in color. I added about a 1/2 teaspoon of salt with the dry ingredients, a cup of chocolate chips, and topped it off with turbinado sugar, which gave it a nice caramel color on top and a crisp sugar crust. I split my batter between two bread pans and baked for 45 minutes and they came out beautifully.

White Bread I

Holy smokes, this bread turned out amazingly. I also mixed it by hand and baked in the oven. I mixed yeast, sugar, and mild and let stand for about 10 minutes. It was just getting a bit frothy. Then, I added the flour salt and butter (which I softened in the microwave). I covered the bowl with a damp towel and let it rise, punched it down and let it rise again. I would've liked to have let it rise a bit longer the second time, but I was in a bit of a time crunch to get it done. It baked for 35 minutes at 350 degrees, the top got nice and golden, and could've stayed in another 5 minutes or so. It cooled in the pan and when I turned it out, it was gorgeous. It was light and dense at the same time. I can't wait to make this again. I made it last night and have almost just the heel left...

A-Number-1 Banana Cake

I made this cake by the recipe using 4 defrosted bananas, a then a second time by adding a cup of oatmeal and some raisins. My friends agreed the second recipe was even better, with what they called "the goodies." I'll save this recipe but continue to add the goodies. I think some shredded coconut would also be tasty.

Slow Cooker Vegetable Chili

I made this chili for my husband because he was sick and it sounded like a wholesome, spicy soup to help heal! I omitted the zucchini and added a can of kidney beans. For the spices, I added 1 Tbls of each, and it's just the right amount of heat for me, especially with the green chilies. My slow cooker is also a rice cooker with just one heat setting which I think is high, so I set it on high for a couple hours and it's perfect.

Vegetable Fried Rice

This is a great recipe. It's a great way to use up extra veggies. I used brown Masbati rice per the recipe. For veggies I used green pepper, eggplant, peas, onions, peas, and garlic. I also added firm tofu, cubed, and scrambled eggs. My husband had THREE servings. He's never had three servings of anything I've made. Definitely a keeper

Blonde Brownies I

Wow! I'm pleasantly surprised! I tried these on a whim for my husband's bday, and they were great. The only modification I made was to sub milk chips for semi-sweet. It was all I had, and they turned out fabulous. I baked these in an 8x8x2. Perfection.

Blueberry Muffins II

Finally - great blueberry muffins! I honestly followed the recipe to a T (unusual...) and only needed to bake them for 25 minutes. I used paper cups and was sure not to overfill them. They have a nice sweetness to them that perfectly balances the blueberries. I'll definitely keep this recipe and make them again.

Easy Fruit Cobbler

I love this recipe and will definitely use it again! I used 2 cups fresh, pitted cherries and made the following modifications: added 1 tsp. vanilla, added approx. 1/4 tsp. salt (eyeballed it), and used 1/2 cup white sugar and 1/2 cup brown sugar. I used a 9-inch pie pan and mine only needed to bake for about 42 minutes. My husband loves it, and when I tasted it, I knew right away it was a keeper!

Best Brownies

I've never made brownies from scratch. I loved these! I'll always use this recipe, and never a box mix anymore. I followed the recipe, didn't make the frosting, but added some semi-sweet chocolate chips to the batter. The only thing is that I used an 8x8 pan and the batter was spread pretty thin. They brownies still turned out great, but next time I might make more batter so that the brownies are thicker.

White Chip Chocolate Cookies

I really enjoyed this recipe! My husband did too. I used 1 3/4 cup white sugar and 3/4 cup brown sugar. Otherwise, I stuck to the recipe and the cookies turned out great. I used parchment paper on the cookie sheet so that I could just lift the paper off the sheet when the cookies came out and didn't even need to use a spatula to remove them. That way they stayed in a nice circular shape. Next time I'll try them with semi-sweet chips. I'd definitely recommend this recipe!

Warm Winter Lemon Cake

Delicious! I'm eating it now. It's a very easy cake to put together. Mine only took 40 minutes to bake, and I probably would even take about 3-5 minutes off that next time. Follow the directions for the baking time for the box cake you use. I prefer more lemon flavor, so next time I'll use the lemon box cake. The lemon pudding flavor is very light when it's warm. I didn't use the raspberries either, just cooled the cake for about 5 minutes and then served it. I'll definitely use this recipe again and try it with different flavor cakes and puddings!
