Spicy Roasted Edamame
This was a perfect way to punch up a vegetable without adding "bad" stuff. It was tasty, but not spectacular, but you can only expect so much out of soy beans.

Stuffed Peppers
This turned out super yummy! The only thing I did differently was added taco seasoning to the meat when I browned it, and topped the peppers off with cheese. I took another reviewers advice and cooked it with tin foil over the top, and it made the peppers come out perfect and tender with no crispy edges.
