Fluffy Whole Wheat Biscuits
These were perfect. I added some corn meal for texture and used only whole wheat flour, and used heart-shaped bowls as cutters to make them. They were so tasty!

Hudson's Baked Tilapia with Dill Sauce
Very quick prep. Made the creole seasoning myself so that actually took longer than anything else. I laced my baking dish with olive oil and my tilapia came out tender/flaky as can be in just 15 minutes. Sauce was simple and refreshing, it yields a bit much, so I'm using the leftover sauce in my mashed potatoes.

Spinach Quiche
I used less butter than the recipe calls for, skipped the mushrooms, used shallots instead of an onion. Then, I added some ham chunks and used various cheeses: cheddar, Gouda, etc. It made enough for a 9" pie pan (with crust - I used "Cheesy Quiche Crust" recipe) plus 2 small ramekins. Very very tasty! The consistency was really nice too... Oh, and really drain the frozen spinach to help reduce the liquids!
