Banana Crumb Muffins

Reviewed: Feb. 6, 2009
These were so good! I forgot to add the butter to the first batch of muffins, but they were just as good as the second batch, so I'm leaving it out from now on to make them healthier. Thanks for the recipe :)

Garlic Bread Fantastique

Reviewed: Oct. 19, 2008
There was way too much Oregano in this recipe for me - it turned the bread green, which was actually kind of funny :) Also, it doesn't need the salt at all. I am going to try it again with less oregano and more salt, and I'm sure it will be perfect.

Spaghetti Sauce Mix

Reviewed: Oct. 19, 2008
This actually gets 3.5 stars (3 from DH and 4 from me). It was really easy and quick, but I just didn't like the sauce very much. I used crushed red pepper as that was all that I had - I think it would be better with the sweet like the recipe calles for.

Fantastic! Takes a few minutes to make, but other than that, wonderful. Low-Cal Sour Cream was substitued, maybe add non-fat yogurt next time. Also used 1/2 the butter.

Mulligatawny Soup I

Loved this soup! Easy ingredients and great taste. I use less butter, and no cream, and it's still fantastic.

Zucchini Boats on the Grill

Reviewed: Oct. 6, 2007
I wasn't thinking and directed dh to cut the zuc before boiling. Oops, the zuc came out squishy, but no one minded! It was still fantastic, but I will have to boil first next time to be sure of texture. I didn't use olives or jalap's due to families tastes. I added an extra Tb of green chile's and they definitely added a nice kick.

So good - I threaded the skewers with green and red peppers and red onion slices. I used extra honey also :)

Sweet Grilled Corn

Reviewed: Oct. 6, 2007
This was fantastic. It's pretty simple and I didn't soak the corn first. Still came out great and smelled really good too. I used regular vegetable oil and Italian seasonings.

Easy Microwave Chocolate Cake

Reviewed: Jun. 18, 2007
Really very good, and so easy! I would give 5 stars, but I had to use slightly different ingredients. I used 3/4C sugar as another reviewer suggested, used canned coconut milk instead of regular milk, and dry chocolate malt mix instead of cocoa (coconut milk and malt mix were all I had). I mixed it all up, and put it in the fridge. Every day I am going to microwave about 1/3 of a cup to have dessert for one - about 5 days worth. I just finished one little cake, and it is not lacking at all for sweetness!

Coconut Curry Tofu

Reviewed: Jun. 8, 2007
This one was just ok. I was expecting something much sweeter. Next time I will use twice as much coconut milk and fry the tofu first. I really enjoyed the bok choy though...

Honey Chicken Stir-Fry

So Good! BF loves it also. I used frozen broccoli instead of mixed veggies because that it what I had on hand. I don't even really like chicken, but is wonderful in this recipe. Very Fantastic and Easy!

Five Food Groups Macaroni Salad

Reviewed: May 24, 2007
I would give this pasta salad 100 stars if it was possible. I love it because it doesn't taste like mayonnaise. The only thing I changed was that I used chopped dried sweet mangos instead of the raisins (because that's all I had); so delicious. Yum, Yum, Yum.

Peanut Butter Cookies II

Reviewed: Apr. 23, 2007
This cookie batter is so good that I only made one batch of actual cookies and ate the dough for the rest of the week! Since I like my cookies soft, I took the advice of other posters and used half brown sugar and half maple syrup. I also added some baking powder and milk and increased the pb. Then I baked for 12 mins at 350. The only thing I will change for next time will be to add more coconut. Fantastic!

Bob's Mexican Stuffed Chicken

Reviewed: Apr. 10, 2006
My boyfriend's favorite meal that I have ever cooked! ~and I've cooked a lot for him :) I didn't have any toothpicks, so I just layered the toppings on the chicken, and it came out wonderful. I hate chicken, and it was so moist, that even I ate it.
