Chicken Saltimbocca

Just OK. I thought the simplicity of the ingredients would make for a very simple, outstanding flavor, but it was somewhat boring. I think I may try it again, but will add less wine, a little garlic and a few capers.

Mexican Shrimp Cocktail

This was excellent. I did add more avocado and also chopped up the shrimp beacuse I brought it with tortilla chips as a dip for a party. The clamato gives it a yummy, unique flavor. yummmm

Wisconsin Cheese Soup II

I love the fact that it doesn't use "processed cheese food" as that is just wrong. Anyway, yummy! A few changes: I was out of carrots, though I didn't miss them I'm sure they would have added a great flavor. I used homemade chicken stock instead of boullion. I also used my immersion blender to blend the broccoli/stock mixture. Lastly, after reading the reviews that it was too thick, I used equal amount of chicken stock and milk and the consistency was perfect. I will make this again, and again, and again...

Pork Chops in Beer

I followed the recipe, except that I added onions per other reviews. The meat was tough, it didn't have that much flavor and it just didn't look good. I had hopes that this would be one of those simple and tasty recipes and it wasn't. :(

Easy Ham and Noodles

Butternut Squash Soup

This was tasty, but I think next time I will use less cream cheese. I used the same proportions of ingredients, but I used one bag of peeled and cubed butternut squash from Trader Joe's and microwaved it, in the bag, for the recommended 5 1/2 minutes. It made this soup super quick and easy.

Easy Crab Linguine

This was pretty bland, even after adding green onion, mushrooms and cajun seasoning along with real lump crab meat. For those looking for an alfredo without as much fat, this would pass, but doesn't really satisify the alfredo craving. I won't make again.

Crab Cakes III

These were tasty, but a little too bland for a 5* rating. I added a bit of red pepper, which helped. I do, though, love how these taste like crab, not filler. The sauce was great and a perfect addition.

Chicken and Red Wine Sauce

Just OK. I found the chicken to be dry and overcooked with the cooking time written. Perhaps it would be better if the chicken was moist. Probably won't try again, the sauce didn't really do it for me or my husband. (My kids didn't even eat it and they usually chow down on any kind of chicken.)

Ann's Shrimp Etouffee

Tasty recipe but beware, when you reduce the number of servings, the text still says to add 2-3 cups of water. I stopped before I put that much in because it didn't look right, but it was still a bit too runny because I put too much in. I added some crabmeat to it and it was a good addition.

Penne in Vodka Cream

Very yummy and easy to boot. I like that it's quick and also made with ingredients I usually have on hand. I did add a bit of garlic and a bit of ground oregano to round the sauce out. I served this topped with strips of pan-friend prosciutto. Our guest, my two toddlers, my husband and I all cleaned our plates, it was a hit.

Easy Caramelized Onion Pork Chops

Nice and simple with good flavor. After I removed the chops and onion from the pan, I deglazed it with white wine and served the sauce over the pork chops & onions. It was very flavorful and dark brown. I think next time I'll do a half-n-half mixture of wine and chicken broth and reduce slightly to make more of a sauce.

This was just OK. I had to add extra oil to make the dough workable. Once they were wrapped and cooked they just didn't do much for me. I brought them to a party and there were still some left at the end.

Slow Cooker Barbecue Ribs

Very, very good. I didn't have any chile sauce, so I used enchilada sauce instead and as others suggested, I used half ketchup, half BBQ sauce. The rib meat fell off the bone and were tender & juicy! I had planned on finishing them on the grill to char them, but as I removed them from the crockpot they fell apart!

Apple Stuffed Chicken Breast

This was a good basic recipe, but I did change a few things and will change a couple more next time. I will be making this again. I used Point Reyes blue cheese instead of cheddar. Excellent bite. I also salted and peppered the chicken. After browning the chicken I threw in some sliced white mushrooms to steam and add flavor to the gravy. Changes for next time? I will add 2 T chopped walnuts to the stuffing for texture. There needs to be more gravy if serving with potatoes (tho. it was fine with the wild rice I served with it), so I'd increase the wine to 1/2 C and would change water to 1 cup chicken broth. Lastly, I would not toss the whole cornstarch mixture in, but start with half and see how much I'd need to add to thicken. YUMMY, though. Hubby and I enjoyed the meal.

Cooking Light magazine's Mexican Chicken Casserole

This was OK. The flavor was good, but it didn't have a punch. I think I'll make it again, but this time I'll marinate the chicken before cooking it, and add some beans and black olives to the mix and top with salsa.

Crispy Zucchini or Pumpkin Blossoms

This was absolutely delicious! Great simple flavor, a great starter. (I needed to adjust the recipe since I only had 8 blossoms and I found that I needed to add 2 teaspoons of water to the automatically converted amount to make the batter the right consistency.) This would be a good fritter dough if it's not blossom season. This is a great way to use up all the male blossoms on your zucchini plant. YUM! (Both female and male blossoms grow on a zucchini plant. The fruit grows from the female blossom and the male is fruitless, which makes it ideal for cooking with.)
