About this Cook
I was raised by a single, working mom who still somehow managed to make a lot of things from scratch. Now, as a stay at home mom, I'm obsessed with cooking from scratch whenever I can.
My favorite things to cook
I'm not too hot with regular meals, but I love baking bread and treats. I prefer cold weather cooking to warm weather cooking, and I love making soup of all kinds.
My favorite family cooking traditions
My grandma didn't really enjoy cooking but she made really good fried chicken, chili (once a year on Halloween), and roasts, so I've learned to make those things. I like to think that my kids are eating the same things I grew up eating! My husband's family doesn't have traditional holiday meals, but have lasagne on Christmas Eve and chicken soup with rice on New Years, so I've learned to make those things, too, and now our kids will grow up with those same traditions that my husband did.
My cooking triumphs
My first Thanksgiving! I made everything - we didn't eat until about 8, and the turkey was a little dry, but it was my first time doing it on my own - just me and my husband!
My cooking tragedies
I was pregnant with our first child, and I had spent all day making a pumpkin cheesecake from scratch (and I mean, *scratch*, fron an actual pumpkin) for my sister's birthday. I pulled that beauty out of the oven and the bottom fell out of the spring-form pan and the cheesecake fell out, hit the oven door and splattered EVERYWHERE! I sat right down and cried - when my family got there they found me on the kitchen floor sobbing and eating cheesecake off the oven door.

Best Toffee Ever - Super Easy
I made this today and I had butter seperation problems, too, which I didn't expect. I wonder if it has to do with salted/unsalted, or brand? I was using Tillamook unsalted butter. When I poured the toffee out there was just a giant pool of butter on top, which messed up the chocolate. Eventually I poured a bunch off, but now that the toffee is cooled I have a layer of butter on top of the chocolate, which isn't very appetizing! However, since most people didn't have the butter problem I'm guessing it was either something I did (and I *did* accidentally let the mixture get past 300 degrees, although I'm not sure my thermometer is entirely accurate) or it was the butter. I will CERTAINLY be trying this again and again until it comes out perfect. Next time I'm going to try Tillamook salted butter and watch the thermometer and the mixture like a hawk. If it still sperates I'll try a different brand of butter. Anyway, the stuff tastes great - I LOVE toffee.

Easy No Bake Cookies
I just got done devouring a bunch of these. I'm like Cookie Monster over here, NOMNOMNOMNOMNOM!! I usually like to follow a recipe just right the first time as a control for future trys, but I did a few different things. I just used 1/2 C (one stick) of butter because after the day I've had, I was too lazy to slice a second stick in half, lol! It worked just fine. I went ahead and used the full measure of sugar and BOY are they sweet! I love it. The only other thing I did differently was to let it boil for 4 minutes, as I didn't think 2 would be long enough. OH, and I added a bit more pudding. I used a pkg of butterscotch and then about 1/2 pkg of vanilla. These cookies are SO delicious I can't wait to try them with all kinds of different flavors of pudding. I didn't have any problem with them being unmanageable in any way - they stayed together and they're not overly sticky in my opinion. TRY THESE COOKIES you will not be sorry!

Creole Tuna
The tomatoes completely over-powered the other flavors - I might try this recipe again with a bit of doctoring and maybe just 1/2 a can of tomatoes.
