Peanut Butter Vegetable Chicken Soup

Oh, WOW!!! One of the top five soups I've ever had! Gave some to my co-worker and his family, and they ate it all and he didn't get any. :-) I teased them with the "secret ingredient" which is about to be revealed when I share the recipe with them. Makes a huge batch too! I subbed a jar of mild salsa in place of tomatoes, and omitted the celery (don't care for it, didn't miss it). Increased the garlic to about four cloves, and sauteed onions and garlic at the beginning. Thanks for an awesome recipe to add to my favorites!

Cranberry Orange Cookies

Made these over the weekend during my Christmas cookie-baking marathon, and they're super yummy! These are a nice complement to all the chocolate cookies I make. They'll have a permanent place in my cookie repertoire. I used dried cranberries instead of fresh and skipped the icing, but used a fresh Louisiana orange in the dough. Maybe that's what made it extra yummy. :-)

Chantal's New York Cheesecake

I made this for Thanksgiving, and left it in the oven overnight. Did it ever crack! It looked like Grand Canyon cheesecake! However, it tasted delicious, especially after I spooned a blueberry sauce over it. Also, it's a great big cheesecake that filled my 10" springform, but that's OK too, because my entire family loves cheesecake. I subbed lo-fat cream cheese and sour cream(but I didn't tell the menfolk), and it didn't compromise the flavor at all. Perfect dessert for an after-Thanksgiving pig-out - thanks!

Pumpkin Turkey Chili

This looked intriguing; I'm always on the lookout for "different" chili recipes (I'm not much of a red meat person). I agree with other readers that it was a little bland, but I had some leftover pinot noir, so I added about 1/4 cup and a shake of Tony Chachere's to thin it down some and add a little "poo-yie"!. It was better the next day; the flavors had a chance to blend more. I'd up the chili powder and other seasonings just a bit, depending on personal taste. All in all, a good recipe to experiment on.

Pineapple Flan

I used non-fat evaporated milk in place of regular milk (only because i didn't have enough on hand), and had no problems with the filling. Just kept an eye on it and stirred often. Not overly sweet, which is good, and the pineapple flavor really stood out. Also, I didn't have pineapple slices, so used crushed, which worked fine. Light, yummy and different!

Orange Marmalade Bars

I was looking for something different and quick to celebrate the (FINAL!) arrival of fall. This was quick and easy. For those who had trouble with the dough, I just took my time and gently pressed into the bottom of the pan and crumbled the reminder over the marmalade. I used store-bought marmalade, but I found it too sweet. I might try using homemade kumquat marmalade, or even sliced apples - kind of apple-pie-like . . . Anyway, the cookie part was good - light and not too sweet. This is a recipe that I think would be fun to experiment on.

Chocolate Frozen Yogurt

I made this recipe exactly as written, and it was DELICIOUS!! I think the cornstarch was the right amount. I poured the mixture into popsicle molds instead of using an ice cream maker. While it didn't freeze hard enough to hold onto the popsicle sticks, it was an excellent creamy texture, and a great low-fat (although it didn't taste low-fat) answer to my chocolate cravings. Thanks a bunch!!!

Zucchini Coconut Loaf

Interesting comments from other reviewers. I shredded one medium-large zucchini, which was a tad more than the recipe called for, so the bread was not dry. I also used 1/4 c. of whole wheat flour in place of all white (LOVE that whole-wheat taste!) and cut back on the sugar to a total of 2/3 c of granulated Louisiand brown sugar. Subbed pecans for walnuts too. Baked for 50 minutes, which was perfect. Nice delicate taste the first day, but even better today, and still moist!

Farmer's Market Vegetarian Quesadillas

I used the vegs the recipe called for, just added a little fresh spinach and shook in a bit of Tony Chachere's. The one thing I should have done - but didn't - was use a nonstick pan. Let's just say, I had a mess to chisel out of my skillet. Otherwise, a yummy and quick recipe.

White Chocolate Fruit Tart

I first saw this recipe in Taste of Home, and it's been a huge hit every time I've made it. No one doesn't like it. I made one this weekend for a joint birthday (mine and sis-in-law) SIL is a professional chef, and she says this is her favorite dessert. Brother ate about half by himself . . . I used fresh-picked blueberries, a peach, strawberries, pineapple and oranges. My favorite part (and most time-consuming) is the "artwork" of fruit on top. Pretty and delicious; a true keeper!

Broccoli Crawfish Cheese Soup

I usually don't change recipes the first time around, but when I saw the directions for using all these pots, I decided to make prep simpler. I sauteed the onions and garlic down, added broccoli and stock to the onion mixture and cooked down for about 10 minutes. Used golden mushroom and cream of broccoli (EXCELLENT flavor!) soups, and 3/4 teaspoon of Tony Chachere's in place of the Creole seasoning and hotsauce. Skipped the cornstarch. Also, as much as I love me some cheese, I just sprinkled it on the top as a garnish. So I got the taste without the calories. It was YUMMM!! Thanks for another winner!

Watermelon and Strawberry Lemonade

I got a so-so watermelon (seedless, thank goodness)at the grocery, and this was the perfect solution! I halved the amount of sugar and used frozen strawberries, and frozen lemon juice from last winter's local crop. It made a lot, was good for a quick breakfast, and I even froze some for yummy popsicles! I liked the chunky texture too. This weekend we'll make another batch for my sister-in-law's and my joint birthday celebration, and spike part of it with adult beverage. The kids will just have to make do with the unleaded version. :-)

Peachy Rice Dessert

I usually go for chocolate, but this looked interesting, and I'm glad I decided to try it! I think I overdid the rice (3 cups instead of 2, but it was OK) and used a bag of frozen peaches. Word of advice - frozen peaches do not broil in 5 minutes . . . Otherwise, a yummy and easy dessert! I also mixed in half of the cinnamon-brown sugar mix into the rice before spreading in the baking pan. Thanks!!

Fabulous Fudge Chocolate Cake

I made this cake for a co-worker's birthday, and it's AWESOME! I increased the unsweetened chocolate squares to five, as recommended by another reviewer, and baked it in two 9" round pans. It came out high, dense (but in a good way) rich and delicious! Raves from everyone in the office, even the non-chocolate lovers - thanks!

Vegetarian Baked Pasta

I didn't use all the mozzarrella cheese the recipe called for (2 cups instead of 4), but it was enough. I was a little puzzled at first where the mushrooms went, but it became obvious that they were topping. Tasted good, but way too much pasta and not nearly enough 'shrooms. Next time I might reduce the pasta by a third and increase the portobellos. Thanks.

French Spring Soup

I love veg soups and have been on an asparagus kick, so this one looked interesting. I used 2% milk in place of the heavy cream, which may have made a difference in taste, and used veggie broth instead of plain water. I also used a sweet Vidalia onion instead of leeks, and added a handful of baby bella mushrooms. I saved the asparagus tips for the end of cooking so they wouldn't get mushy. However, I think it needed more seasoning. Maybe garlic, seasoned salt, etc? Worth keeping and experimenting . . .

Baked Dijon Salmon

I LOVELOVELOVE salmon and wanted something quick for dinner, so I tried this recipe. DEE-LICIOUS!!! I didn't have dijon mustard, so I used sweet vidalia onion mustard, and it was excellent. The only thing is, next time I make it, I might half the amount of butter; I don't think it needed quite so much. And cut back just a tad on the bread crumbs. I baked it a little longer than 15 minutes because of the thickness of the fillet. I ate it with some fresh steamed asparagus, and it was YUMMY! Even my cat wanted some! Thanks!

The Best Oatmeal Cookies

I agree - these are the best! I tried it for 2007's Christmas cookie assortment, and it has become a raving classic. Everyone LOVESLOVESLOVES these cookies! I just made a batch to thank a co-worker for a favor, and passed the rest out to other lucky co-workers. It was a very good day at work! A couple of suggestions. I simply rolled the cookies into balls about 1" - didn't flatten them - and they baked up just fine. Also, the dough does get quite stiff, so I just tossed the spoon in the sink and got in there with my hands to mix the oatmeal in. Hey, maybe that's why they're so good! ;-)

Chocolate Cobbler

Also known as pudding cake. I made it for a women's group meeting I attend, and everyone loved it. Very easy, even though it looks nasty before baking. ;-) I thought it was a tad too sweet, but that's easily remedied. Thanks!

French Breakfast Muffins

Instead of the full amount of butter and cinnamon/sugar mixture to dip them in, I used 2 tablespoons of butter and sugar and brushed the butter on top, then sprinkled the cinn/sugar. These muffins are delicious! Light flavor that mellows after awhile, nice texture, and sneakily addictive. :-) I didn't get quite a dozen, but that's what experimentation is all about. Thanks!
