My favorite things to cook
I love preparing Enchiladas as well as various Italian dishes. When the warm weather prevails, grilling is a true enjoyment.
My favorite family cooking traditions
At Christmas time, my parents would prepare pound cakes and use the old fashioned pans rather than the Bundt-style ones. The cakes always came out flavorful and moist.
My cooking triumphs
Recently I prepared a Minestrone soup in the crock pot which came out fabulous. We actually ate the leftovers, rather than discarding.
My cooking tragedies
Beef Wellington comes to mind along with Cristmas day Croissants from scratch.

Pork Chops with Jalapeno Jelly
This was a delightful and quick weeknight dish. The next time, however, I will place the sauce on the chops rather than dotting the platter.

Balsamic-Glazed Salmon Fillets
This was superbly delicious. All the flavors melded together for an exquisite taste. Also, it was prepared on a weekday and was quick and simple to put on the table.

Bow Tie Pasta with Sausage and Sweet Peppers
The core recipe was excellent. My only addition, I recall, was sliced black olives which, I feel, enhanced the flavor.
