Cinnamon Hazelnut Biscotti
These are delicious and somewhat different than the usual almond biscotti. I did chop up the hazelnuts, but left the skins on. I also sprinkled cinnamon/sugar over the logs before the firs t baking. Be sure to let them cool about 15 minutes before slicing for the second baking, and turn them on their sides to bake. I discovered a cool product at Trader Joe's--a grinder containing sugar,coffee, and chocolate! Next time, I will use that instead of the cinnamoin/sugar for a "Cappaccino Biscotti"!!

Creamy Mushroom Spaghetti Squash
I opted for fat free cream of mushroom soup and subbed plain fat free greek yogurt for the sour cream. Skipped the butter and just satueed the onion and garlic in a pan sprayed with cooking spray. I felt like I was eating something really rich and decadent---had to keep reminding myself that it was only 2 Points Plus on the WW plan!!

Cheddar Cabbage Casserole
Wow, what a nice surprise! I received a cabbage the size of a beach ball in my farm share. Seriously. I made soup, cabbage slaw, apple cabbage salad, and Stuffed Cabbage Casserole. I still had cabbage. Then I found this recipe. I was skeptical that it would turn out, as the method was very different than anything I'd tried before. I didn't have cornflakes, but sprinkled panko on the bottom--and top--and sprayed it with Pam instead of tossing with butter. I used cream of mushroom soup and light sour cream instead of mayo. I added a layer of choppped turkey pepperoni that I needed to use up. Much to my surprise, this was amazingly delicious, super easy and delivered me out of cabbage oblivion!
