I'm a mom of 2 beautiful children and have a DP of 14 yrs. I live in Miami and am surrounded by all the wonderful Caribbean cuisines. I'll make black beans one day and Jamaican patties the next. I wouldn't live anywhere else!

I'll try anything once, but prefer Asian dishes.

We roast a whole pig in a china box every year for Christmas eve dinner. It's a entire day affair.

Anything that I can get my very picky 9 year old son to eat.
My cooking tragedies
I decided to wing a chocolate cake recipe for Thanksgiving dinner. It tasted great, but looked like a great big mud pie. LOL

Cochinita Pibil
Very authentic, I just added garlic and put it in a crock pot for about 8 hrs. I was unable find the achiote paste, so I purchased the whole seed. Don't do it try to find the past, because I had to pound on those seeds with a hammer for hours.

Pancakes on the Go
Whole grain goodness with a light texture! I followed the recipe as stated, except that I used skim milk and whole oats since it was all I had on hand.

Fancy Chicken Salad
