Cheater Pot Pie

Easy to make, and my daughters both liked it. I used cooked boneless skinless chicken breasts instead of canned chicken. The recipe does not specify what to cook the frozen vegetables and chicken in, so I cooked them in the liquid from cooking the chicken. I found it quite runny when done, so I added 2 tbsp cornstarch dissolved in water to thicken it a bit. Also, at the temperature specified, the biscuits would have been burned by the end of the baking time. When I looked at them at 20 minutes, they were done, so I left the pie in the oven but turned the oven off for the last 5 minutes. Thanks!

My family really liked this and it was very easy to make. I found it a lilttle on the dry side and also found that the 15 minute resting time cooled it off too much. Will make adjustments and make again. Thanks!

No-Guilt Zesty Ranch Dip

Delicious, and easy to put together. Being vegetarian, instead of the bacon bits I added a little liquid smoke. I can't imagine it being any better and I have dipped a multitude of things into it since I made it. Thanks!

Twice-Baked Mashed Potatoes

Broccoli Cheese Soup

Very good soup! Like some other reviewers, I doubled the broccoli, to make this more nutrition dense. I didn't double the cheese, and it was still plenty cheesy. I used my immersion blender to puree the soup before adding the cornstarch. Thanks!

Whipped Shortbread Cookies

These are delicious and easy, although somewhat time consuming, to make. After reading many of the reviews, it seemed that long whipping was the key here. What I did was whip the room temp butter for 5 min, then whipped for 5 min after adding each 1/2 cup of additional ingredients. This totalled 25 min whipping! (I wish I had a stand mixer!) The cookies were so tender and tasted perfect. I skipped the cherries, as we don't really like them, and put coloured sprinkles on instead. Thanks!

Crispy Oven-Fried Fish Fillets

This fish was a big hit at our house! I used halibut fillets, which were quite thick, so I baked them for a few extra minutes. My husband, who is leery of fish, had two helpings! I used garlic and butter flavoured croutons. Will definitely make these again. Thanks!

Mom's Macaroni and Cheese

This is excellent and easy. I added extra cheese (about 1/2 cup more cheddar and twice as much Velveeta) because we love cheesy. I also used panko crumbs on top instead of regular bread crumbs and mixed them with a few tbsp more shredded cheddar as well as the butter. Delicious! thanks!

Baked Pasta Primavera Casserole

This was surprisingly good for such a quick and easy to make dish. I follwed the recipe exactly, and everyone liked it. I think next time I might substitute some Asiago cheese for some of the mozzarella and add some minced garlic or garlic powder to make it more flavourful. Thanks!

Orange-Ginger Tofu Triangles

These are very tasty and easy to make. I didn't drain the marinade off before I baked them because I wanted sauce for the rice. My only problem with the recipe, hence the 4 stars instead of 5, is that the marinating time should be included in the total time. I ended up not eating this on the night I planned to because I thought it would be ready in 1 hour and 25 minutes. It did taste delicious the next night, though. Thanks!

Excellent brownies! I was a little leery of the pepper, so I added only 3/4 tsp. but you couldn't notice it at all. Added the chopped walnuts to the batter, but didn't sprinkle any on top, and that was just right for us. Thanks!

Roasted Lemon Herb Chicken

My husband and daughter liked this very well, and it is easy to make. They really like gravy, and I found that about halfway through the cooking time the chicken had soaked up all the juices. So I heated a can of chicken broth in the microwave and poured it over the chicken. There was plenty of juice at the end to make a lovely gravy and the herbs and spices from the rub really enhanced the flavour. If you are going to do this, taste before adding any additional seasoning to the gravy, because you probably won't need it. Thanks!

Kathy's Roast and Vegetables

Very easy to make and the family really liked it. I didn't bother browning the meat beforehand, and it was fine. Also, when I took the meat out to rest for 15 minutes before carving, I removed the vegetables and kept them warm and added a mixture of 2 tbsp flour kneaded with 2 tbsp margaine to the slow cooker. I put the lid back on and turned it up to high and ended up with delicious gravy for the meat. Thanks!

I'm sorry, but this was way too sweet for our tastes. I also think the crust recipe could have done with about a quarter of the sugar. It was interesting to try, though, and diffewrent from anything I have ever made. Thanks!
