Garlic Green Beans

Very good, simple recipe. I used just EVOO and garlic(minced)... first cooking the green beans to an 'al dente' stage, if you will... draining, and then added to the oil/garlic on the stovetop. sauteed for about 5 mins and then sprinkled w/fresh parm. Mmmmm easily and lovely.

Pasta with Tomato Cream Sauce

This is really good...I used a LOT of garlic and a bit more onion...but it was tasty over-all. Not sure why others don't like this. It's better then any jar-sauce out there! :)

BLT Pasta Salad

I did as the recipe called for and added some cheese and this was very bland. Maybe if it marinated overnight (instead of 6 hours) it could've been better. Who knows. Not a fan of this at all.

So/So...I used a full cup of wine and did not find it that noticeable at ALL. It was pretty bland to tell you the truth...even after adding pepper/salt and parm to it.

Easy Olive Oil, Tomato, and Basil Pasta

Will make again. I did what other reviewers did and sauteed the garlic with the olive oil, added a bit of hot pepper flakes and some slivered onions...I used 3 'tomatoes off the vine' and a bit more olive oil. I tossed this with some fresh paremesan and topped with fresh basil before serving. Next time I will add more hot pepper for heat, but since this was a dish for company, I didn't want them to think it was 'too hot'. EASY...I had all the staples on hand. :)

Cherry Tomatoes Filled with Goat Cheese

SO GOOD!! This recipe was awesome! My whole family loved it! The only things I changed were: I added roasted red peppers on top of each tomato, and I cooked them at 350 for about 12 minutes...with a bit of olive oil sprinkled on top. Otherwise, this was a hit with everyone! Thank you :)

Slow-Cooker Chicken Tortilla Soup

YUM! That's all I can say. This is a very easy, but very tasty slow cooker soup. You can make it as spicy as you want or as mild as you want. Add toppings or not. We use canned Rotel HOT tomatos in this as well as canned chiles...I omit the water and have always used canned corn...comes out just fine. My hubby likes to put this on top of tortilla chips, top it with sour cream, onions and cheese. I only use low fat sour cream and a bit of cheese and onion. Very healthy... FIVE BIG STARS ON THIS ONE! :) BTW- It may be cheaper to buy a rotissiere chicken from the grocery store and shred it as opposed to buying a pound of chicken breasts. :)

Chicken Tortilla Soup I

5 STARS! Love this. For some reason this came out a bit too-soupy for me, so I just ladled this over brown rice. Then I added a dollop of sour cream, some red onions, some fresh cilantro and a tortilla chip or two:) WE love this. We also use Rotel HOT tomoatos. We love ht heat. Try this, you won't be disappointed!

Jalapeno Popper Spread

WOW! We love jalapeno poppers and this was great!!! I would give it 10 stars if I could. This is what I did- I used the suggested cream cheese (I used Lite) and the Mayo, I added maybe 1/2-3/4 cup of Shredded Cheddar, and 1/4 cup of parm. Stirred that up and put some more cheddar on top. I used the suggested chiles and used FRESH jalapeno's (7 of them). I baked at 300 for 20 minutes....and wow...TO DIE FOR! :) This will be a staple for parties for years to come!:) THANK YOU!

Microwave Baked Potato

This was nice. We were hungry and were cleaning the oven, so typical baked potatoes were out of the question.... I made 3 large, potatoes, around 6 minutes each size...and WAY more salt.... I put on shredded cheddar and nuked it for another minute when it was done....added some pepper, and sour cream and served...YUM. thank you:)

Blue Cheese Burgers

One word- YUM. The whole family liked these burgers. I did add a bit more hot sauce as we prefer it this way and some chopped garlic. My husband likes a lot of bleu cheese so in addition to what the recipe called for, I melted some on top of his burger before serving.

Pretty easy to make! Very tasty! I also added some leftover rice (from chinese take out) to the mix and added a bit more chicken broth to make it thicker. Will be making this again for sure. Big hit with 12 year old son and husband :)

Lazy Lasagna I

THIS recipe is always a hit whenever I make it. I usually use spicy pork sausage to give it some kick. I use lowfat cottage cheese and lowfat sour cream sometimes to cut down on the fat. you can't even tell the difference. I've made this plenty of times and will continue to make it!! :)
