Flavorful Flounder

Reviewed: Jul. 13, 2009
This was not a hit at my house. Maybe it was the mayo, but not sure. The fish was mushy and there was way to much coating.

Creamy Macaroni and Cheese

Reviewed: Feb. 4, 2009
I am a bit mixed on this recipe. My husband and I liked it, the kids hated it. The parmesan flavor was rather strong probably why the kids did not enjoy. There was too much liquid in this one with the 24 oz of milk and cup on broth because I had enough sauce for two pounds of pasta. I would cut that down if I try again this would also bring out more of the cheddar. It was very cream as the name says, but not much flavor.

Broccoli Casserole III

Reviewed: Jan. 8, 2009
I had to change the "fake" cheese to real cheddar, my reason for 4 stars. I used 4 oz shredded cheddar layed with a 14 oz bag of florets. I crushed the crackers (Ritz) and sprinkled over the casserole, melted the butter and poured over top. Very very good!!! The real cheese was not dry at all!

Peanut Butter Quesadillas

Love this for not only the kids, but myself. I have tried many combinations. My favorite is PB and marshmallows, the mini kind, they just melt and make a sinful treat. After frying in the pan let cool for a minute or two or all the filling will flow out every where. I never use butter or cooking spray just a non-stick pan. YUMMY!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Reviewed: Oct. 29, 2008
This was a great recipe. I cut the sugar to 1/2 cup and used half dark choc., half semi-sweet chips. I have one very picky eater and I have become very good at "sneaking" things into recipes that he won't touch.

Stuffed Baked Sweet Potatoes with Pecans

Reviewed: Sep. 28, 2008
I love this recipe. I bake 3 or 4 potatoes and then just eyeball the pineapple and pecans. I also add a couple tsp brown sugar and chopped dried fruit such as mango and papaya. I do not scoop back into shells, but just serve in nice dish. I save the leftovers which are just as yummy.

Baked Rice Pudding

Reviewed: Sep. 24, 2008
I made this with some changes. I used two cups of cooked rice I had in the fridge from the night before. I upped the milk to 2 1/2 cups. I used 1/4 brown sugar and 1/2 regular. I also used cinn., nutmeg, and all spice about a tsp of each. I cooked in water bath for 1 1/2 hours and stirred at each half hour (twice) to distribute the ingredients.

Adrienne's Cucumber Salad

Reviewed: Jul. 4, 2008
Yummy!! I used 1/2 cup of vinegar,1/4 cup of suger,1/4 cup of water, pinch of salt, and lot's of dill. I heated the mixture in the microwave and then put in fridge to cool BEFORE pouring over sliced cucumbers and onion, I let sit overnight and it was fantastic. We ate it in two meals and then I picked more cucumbers from my garden and put those in the leftover liquid and those were great also...so I got two for one!

Sauteed Navy Beans and Artichokes

Reviewed: Jun. 2, 2008
This was a different recipe. We love beans and artichokes, but something about this didn't turn out right. The beans were mush and the dish tasted very pickled possibly because the artichokes were marinated. I was able to eat what I put on my plate, but hubby couldn't. I threw is away. Possibly non-marinated artichokes would work better.

Karen A's Chocolate Dump Cake

Reviewed: May 28, 2008
This cake was soooo goood! I used a yellow cake mix and vanilla pudding. I put a mixture of walnuts, butterscotch, and chocolate chips. I think you could have endless combinations with this recipe idea. My family is not big on chocolate, the reason I tried the other combo.

Ginger Glazed Mahi Mahi

Reviewed: May 26, 2008
YUMMY!!! I boiled the sauce and put more over fish. I grilled by putting double layer of tin foil on grill and forming a boat by folding up side. Grilled for exactly 8 mins, this method works for any fish and keeps it from sticking. No need to even flip the fish just shut the lid and leave for 8 mins. This works for any fish less then 1 inch thick. I also used frozen Mahi Mahi from Sams and let completely defrost.

Hot Crab Dip

Reviewed: Jan. 5, 2008
This was a huge hit at my New Year's Eve party. I used 13 oz frozen imitation crab meat that I chopped. I also used one regular cream cheese and one sour cream and chive flavor. I did not add the hot sauce and cut down on the mayo as others suggested. I was a winner.

Kielbasa and Kidney Beans

Reviewed: Jan. 5, 2008
My husband and I love this recipe. I found it in Taste of Home years ago. I add half the brown sugar because it just seemed like it would be to sweet, but it is still good. I have added celery, cabbage, and many other veggie's as well. I also have changed up the beans and used pinto, kidney, navy and they were all good. I serve this over rice.

Stuffed Peppers

Reviewed: Dec. 11, 2007
I had whole peppers frozen from my summer garden and used them. This did not require as long of cooking time because the pepper were already soft. I also used homemade marinara in place of the sauce from a can, this also eliminated use of the spices. I baked covered and put cheese on top last 5 mins. These were very good!!!

Amish Friendship Bread Starter

Reviewed: Aug. 14, 2007
I love this bread, but always run out of people to give the starter too. This last time I froze them. I took one out and just let it sit for the 10 days, not adding the extra 3 cups on the 5th or 10th day, I just stirred it each day. Then on the 10th day I followed the rest of the recipe and the bread turned out wonderful, no difference and I don't have to find 3 people to give a starter too. Thought this might help anyone trying to find a friend to share with or if your friends all say no.
