Easy Raspberry Sorbet

Very easy. We always have the ingredients for this. Last time we used sugar-free and Splenda so my mother-in-law could have some with us and it was so good too.

Vanilla Cherry Ice Cream

We had fresh picked Bing cherries and used them in this ice cream. It was so delicious. It was easy to substitute Splenda so even my diabetic mother-in-law could share with us.

This was yummy. My husband and kids loved it. I thought it was too fatty tasting. We used chocolate chips, marshmallows and almonds. It is much better the next day.

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 2, 2008
This is the best biscuit ever. We always double it, sometime triple just to get enough to go around because everyone loves them. They are even bigger if I make them first and then leave them on the pan and don't bake until just before dinner is done.

A fudgy brownie that is pretty good. Not too greasy we just prefer a more cake like version.

Easy Slow Cooker French Dip

Reviewed: Jun. 28, 2008
Much better the second day. The first day the sauce which is so rich was much too fatty for our family so I refridgerated it, took the excess fat off and then reduced it by half. So yummy. I added the beef back to the sauce to reheat before layering it onto warmed outdoor rolls. Then it was the best!

Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Jun. 15, 2008
Super yum! The kids don't do super spicy so I did 1/4 tsp. each cayenne, chili powder and paprika. We added cooked chicken strips and it was a one dish meal. Made way more than 4 servings, more like 6.

Making these was hilarious fun. My kids loved them. The only problem was the recipe just didn't make enough! Next time I'll double it for sure.

Shortbread Supreme

We patted this dough into a tart pan as the base for a fruit pizza. It was just right for most of my guests but I thought it was a bit bland. I think needing a better quality butter might have been my problem

Made these for a friend and I for something different than red Enchiladas. So yummy we ate the whole pan, just us which is VERY unusual. White Queso was difficult to find though.

Light and yummy. We used pumpkin pie spice 1 1/2 tsp and added butterscotch and chocolate chips. Kids ate them up and didn't even realize they were eating a relatative healthy muffin.

Pork Chops for the Slow Cooker

Reviewed: Feb. 1, 2008
I didn't read the reviews and just went with the rating before I started this. After reading some reviews I ended up adding 2 cups of orange juice. Next time I will only add one because it watered down the soy too much but my hubby exclaimed this to good "even cold" the next day. I did add a 1/4 tsp of cayenne as we like things spicy and it was good. I rated it a 4 because after only 1/2 hour before I watered it down it would have had too much soy.

Italian Cookies I

Very easy to make. I let my pre-k kids roll them into snakes and then shape. A great recipe when you don't want a cookie with lots of sugar but have a snowy afternoon to entertain the kids with a snack they made themselves.
