Broiled Sole in Light Cream Sauce

I really expected it to taste good because I have both South Beach cookbooks and have made some great recipes from them. Since this was from South Beach Online, I assumed it would be as good as the others. Unfortunately, I was extremely disappointed in this dish. It got good reviews but it was one of the worst sauces I've ever tasted. :(

The onion juice ruined the taste, in my opinion. This would have tasted much better with substituting with grated onion instead, and including salt.

Parmesan Chicken II

This was so easy and was very good! I added garlic powder, onion powder and dehydrated onion to the cheese and added about a tablespoon of milk to the egg. It was enough cheese for 16 drumsticks and still had some left so had to throw it out. I'd use 1 1/2 cups instead next time to eliminate waste. It turned out crispy and juicy...my boyfriend ate 10 drumsticks!

Authentic Louisiana Red Beans and Rice

This was a great recipe! Like most, I made a few modifications to suit my tastes. I doubled the cajun seasoning but used the lowered sodium version and found it still needed salt so I added a tablespoon of kosher salt and about 1/2 tsp. black pepper. I also added about 2 T. worcestershire sauce and used half the oil. I wanted to cut the fat content, so I used Jennie-O lean smoked turkey sausage instead of andouille.

Southern Style Thanksgiving Green Beans

Great! I made it for Thanksgiving last week. I made a couple changes to add flavor though. I omitted the onion since my boyfriend is incredibly picky and just slipped onion powder in to be sneaky. :) I also added about a tablespoon each of kosher salt and ground white pepper and one piece of thick sliced bacon, which I just removed after cooking. I'll be using the recipe next year. Thanks!
