Kiki's Borracho (Drunken) Beans
I made this last night and it was delicious! Very flavorful on it's own, but I served this with chopped onions, cilantro, tortillas, and all the fixings for a make your own burrito dinner--very tasty! Please use vegetable broth to make this vegetarian--SOO good!

Jalapeno Cheese Squares
Yum! I used 1 less egg and 1/2 cup extra flour to make it less "quiche-ey" and it was a good vegetarian dinner when paired with veggies on the side.

Ricotta Fettuccine Alfredo with Broccoli
I just made this for dinner and it was really good! It is rich and easy to make. My husband is an alfredo fiend and he wanted to rate this 5.5 stars. I am glad to find a healthier alternative to the heavy cream version. I did add a lot of garlic for extra flavor.
