About this Cook
I live in Arizona with my husband and my two beagles.
My favorite things to cook
I loooove to bake. Especially cakes and brownies. Recently I've been cooking a lot of Asian food...I made some really really good Thai food, Pad Thai I guess, with peanut sauce. It was so yummy.
My favorite family cooking traditions
I don't know that we have any traditions. My mom is from England and makes awesome roasts with potatoes and yorkshire pudding. I need to know how to cook that stuff.
My cooking triumphs
Any time I make something and alter the recipe and it turns out good. That's always exciting for me to know that I understood the food well enough to get creative.
My cooking tragedies
I've completely, and unintentionally, omitted ingredients far too many times.

Joey's Peanut Butter Cookies
My husband absolutely loved these cookies. So much so that he is taking them to work to enter in his teams cookie contest. Only change I made was I added almost a whole bag of semi-sweet chocolate chips. I would have used the whole bag but there just wasn't any extra room for more chips in the dough.

Yummy Sweet Potato Casserole
Very good! I accidentally made way too many potatoes, but it turned out very good anyway. I ended up doubling the topping, which was fantastic. One note, I read several times in reviews that the topping would not "crumble" as the recipe states. The recipe also states to make the crumble topping with softened butter...This is not the best approach. If you want your topping to crumble - use cold butter, right out of the fridge. Crumbles everytime. Also helps to mix the crumble topping with your hands instead of a utensil.

Peanut Sesame Chicken with Mushrooms
Very very good. I use cashews instead of peanuts, and I keep some chicken broth on hand to give the dish some extra sauce. I've made this several times...And am planning to make again for dinner tonight.
