About this Cook
I am a 24 year old mother of two rockin' little boys, Brodie who is almost 3 and Sylas is almost 1. I recently married their father, who I've been with since right before my 16th birthday. I like hanging out with my family, keeping my kids entertained and nagging at my dad for not recycling anything other than newspaper.
My favorite things to cook
I absolutely love fast and healthy meals. Preferably those that require as little dirty dishes as possible. We dont eat processed foods, which makes it difficult, but we manage to eat pretty well. Any time I pull of a meal that takes less than an hour and my family enjoys, I've done well.
My favorite family cooking traditions
I am still trying to master my Grandmas chicken noodle soup. Others in the family can make a perfect replica of her noodles but I just cannot get the secret down yet.
My cooking triumphs
Every one loves my lasagna, but I am not a naturally good cook. I cant throw a meal together without a menu and a recipe so every time I find and make a new dish and my son and fiance like it enough to ask for it again I feel like I've accomplished something.
My cooking tragedies
There are too many and they are too aweful to relive to list. Just ask my husband how many times we've eaten sandwiches because my new recipe for the week was a disaster.

Zippy Shrimp Linguine
Everything was great but I used whole wheat pasta and the noodles were dry even with extra oil.

Beth's Portobello Mushroom Burgers
These were really easy and really good. I left the horseradish off of mine and added a slice of swiss cheese to them all. A keeper for sure!

Apple Crisp II
My husband made a double batch of this for my family during a huge get together and people are still talking about it 6 months later. Serve warm with vanilla ice cream!
