Zucchini Oatmeal Cookies

These were easy to make and turned out good but there was something missing. The taste was bland, using raisins, nuts and zuchinni, I thought there would be more flavor. Next time I will add more spice; perhaps coconut or lemon, I think experimenting with these could produce a really great cookie.

Mom's Zucchini Pie

We loved this recipe for Zucchini and it turned out excellent. The only change I made was to add fresh dill in place of parsley. It was easy to make and looks like it took a long time. It will be one of our favorite recipes during zucchini season!

Stuffed Zucchini

I changed this recipe a little. I substituted marinara sauce for the crushed tomatoes and soup, added a sm, ground zucchini in place of seeds in the filling, added lemon marjorim and parsley,worcestershire sauce, garlic, and for the sausage I used spicy italian. I also cut and added half a wedge of monteray jack and colby cheese for the top. My dh loved it.

Pumpkin Zucchini Bread

Black Walnut Pound Cake

This was the best ever! It was the hit of my holiday meal. I changed the icing as I had no cream cheese on hand, made a 7-min frosting, added black walnuts on the top along with black walnut flavoring. Wonderful cake.

Applesauce Salad

This was awful. We did not like the consistancy. It was in my opinion a waste of good applesauce and good jello. The cinnamon taste left us cold. My husband hated it. It just did not work.

Mom's Shepherd's Pie

This was quite good, especially for the mashed potato lover at your house. I added 1 can tomato soup and 1/2 can of beefbroth to the liquid & pinch of sugar. I added onion and garlic to the meat while browning. We enjoyed it! Good comfort food.

Cranberry Apple-Nut Pie

My DH and I both loved this pie. It had just the right mix to be very tasty. I changed the almonds to pecans as that was what I had on hand. I added more cinnamon and used 2 cups of apples. I will make this again!
