Cool Cucumber Salsa
Very good. I decided to add a "sweet" note to the salsa, and added frozen corn (thawed). I also used red onion, as that is what I had on hand. This is a versatile recipe, and a great starting point.

Peppy's Pita Bread
Per another reviewer's advice, I used half AP flour, half whole wheat flour. YUM! Great texture and mild taste. (5 stars for recipe WITH substitution)

Homemade Peanut Butter Cups
These were pretty good. To me, something about the peanut butter centers wasn't quite right. Perhaps too much powdered sugar? I used a good dark chocolate candy coating instead of the milk chocolate + shortening, and I think this was an easy substitution which worked great. Going to have to tweak them a little to get them just right!
