Spicy Spaghetti Squash

Someone gave me a spaghetti squash from their garden and I had no idea what to do with it, but this recipe was a great choice! I left out the capers, used 1 lb. of turkey, and 1 can diced tomatoes with juice. We didn't think it was overly spicy and it was really really good!

Cha Cha's White Chicken Chili

This is a very tasty recipe, but I agree with others that it is a little spicy. I halved the recipe, used only green chilies, added 1 Tbsp. flour with the spices, and used one can of broth. It had great flavor and nice semi-thick consistency. I may cut down on the cayenne next time, but I will definitely make it again.

Zesty Zucchini and Squash

I was very surprised about how good this was. Like others, I have WAY too much zucchini on my hands, and thought this sounded like an easy side dish for enchiladas (and healthier than rice and beans). I cubed the zucchini as instructed, did not use any squash, and used diced tomatoes with jalapenos, rather than green chilis. It was a little too spicy, but still really very good. Otherwise, I followed the instructions and was plesantly surprised! I will definitely be making this again soon. Thank you Loracus!!

Carolina Country Style Ribs

This sauce is very good and super easy! It's not a thick, tomato-based sauce, so don't expect that. I had never had vinegar-based bbq before, but I had some country style ribs, and my partner said it sounded good. We LOVED it! I am making it again tomorrow with pork spareribs. Yes, you must like vinegar to appreciate this sauce, but if you do, go ahead and try it!

Pork Chops with Dill Pickle Marinade

Yep, it sounds crazy but it's great, and couldn't be easier. It definitely looks gross while marinating in a ziploc, and I would not recommend telling people what it is until after they eat. But it was simple and produced a great flavor, more complex than just pickles. Thanks Karen!

Heather's Cilantro, Black Bean, and Corn Salsa

This was SO good! We loved this and even though it really made a ton, the two of us ate every bite! Only changes I made were using Rotel diced tomatoes with chilis, and one fresh diced jalapeno. It was good just out of the bowl! Thanks Heather!!

Best Spanish Rice

This recipe is really really good! You do have to follow the directions exactly, though. Thanks to Karen H for the tip about the foil, that really helped out. (Covering the pan with foil and then putting the lid on for a tight seal.) You have to remember that the salsa is going to make all the difference in this recipe. Use a salsa that you know you like, and one that is not too hot for whoever you are feeding. Also, the amount of liquid in the salsa needs to be considered, too. I can't remember what salsa I used, but it came out perfectly! Good luck, it's the best!!

Pumpkin Cheesecake II

Although this recipe does have a lot of ingredients, it's really no more labor-intensive than any other cheesecake. And the results are fantastic! I made it for Thanksgiving and got SO many compliments. I did not use the pecans in the crust, because I don't have a grinder, but it was still perfect. I will definitely make this again.

Cinnamon-Apple Chex® Mix

I made this for Thanksgiving and it was a really big hit. I made 2 batches separately and doubled the cinnamon in the second batch because the first was not cinnamony enough for me. I mixed them together and it turned out great. I went to Whole Foods for the dried apples (in the bulk aisle) and then saw they had them at Wal-Mart! My dad has requested another batch for Christmas and asked that I add cashews as well. This was very easy to make and tastes great! It's not super sweet but it is very addictive! I highly recommend it!

Broccoli with Garlic Butter and Cashews

What a nice change from basic broccoli! This was really a big hit with my family, and they have already requested it again, less than a week later! I steamed the broccoli, but made no other changes. This dish does have a slightly Asian feel to it, so it goes well with an Asian-themed meal. However, if you served it with almost any other kind of meal it wouldn't seem out of place. YUM!!! Thank you!!

Friendship Soup Mix in a Jar

This soup is excellent! It makes quite a bit, but no one in my house complained about eating it a few times! From the advice in all the other reviews, I used fresh minced garlic, 2-10 oz. cans of Rotel diced tomatoes with green chilis (instead of the 28 oz. can), 1-15 oz. can of tomato sauce (instead of the paste) and small star pasta. It was perfect. The ingredients provide lots of different textures, and it is not a heavy soup. Thanks Bea!
