About this Cook
My name is Samantha, I am a daughter, sister, mother and wife. I have one beautiful little girl who is almost 4. I work full time as a Medical Assistant in an internal medicine clinic. During the week I have a hard time heading into the kitchen to cook a meal, but make up for it on the weekends. I enjoy trying new recipies and often browse this site for inspiration.
My favorite things to cook
Comfort food. I like to browse old recipe books handed down to me or purchased from second hand stores for recipe ideas. I am presently trying to get more familiar with crock pot cooking in hopes of developing dinner recipies that I can prepare a in the morning to enjoy after with my family after the daily grind.
My cooking triumphs
I make a wide array of secret family candy recipes for the holidays. My goodies are always the first to be gobbled up. Most of the treats were created by my grandmother while she was a cook in Alaska in a logging camp. If I were to share them on this site I would be linched, dont worry Grandma, secret is safe with me.... Sorry everyone.
My cooking tragedies
Seafood. I cook with my nose and my mouth. I can smell it when its done and taste it when it is good. Since I dont like seafood this method fails me. Bottom line, if it comes from the water I wont eat it!!! About the only seafood I can decently prepare for my husband is sauted shirmp, because it turns pink when its done.

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)
My family was throughly enjoyed this dish. I served with flour and corn tortillas. My fave was the corn, my husband preferred the flour. I also added a can of black olives to the rojo as it was simmering. Otherwise I followed this recipe to the letter Thank you so much for sharing!!

Hawaiian Wedding Cake I
This cake was very moist, heavy, and almost breakfasty. I followed this recipe exactly and although I do plan to make it again I also intend to tweek it a little. If you want a smoother texture whiz the coconut in your food processor before hand. Also next time I plan to add 1 tsp vanilla, a 1/4 tsp of cinnimon and nutmeg and subsitute 1/2 cup of the white sugar for brown. My family and friends all enjoyed this cake but all felt that the flavor was missing a certain "umph" we all agreed that it was a bit bland. With the above mentioned changes I think this cake could get a five star rating from this cook.

Peanut Butter Balls III
The trick to these is to pour the melted peanut butter mixture over the cereal mixture, then combind it by hand. Becareful it is hot! This recipe is exactly like one that my mother has made for years around the holidays. We also use other flavored chips like milk chocolate, butterscotch, white chocolate and my favorite peanut butter. I've been known to decorate with holiday sprinkles or mini choco chips and/or dallops of other melted chips. Oh so good and it makes for a pretty presentation. This is for sure a 5 star recipe, second to none. :o)
