Acorn Squash Soup

Holy soup, this is good! Totally restaurant quality. Like a acorn squash bisque. The dill with the curry and the onions...and the creaminess! Incredible. Oh, and I used a stick blender and pureed it right in the pot. Super easy.

The Best Potato Salad

Wow. This is my permanent potato salad recipe from now on. I added some sugar because I like my potato salads on the sweet side. Soooo goooooood.

Chicken Wild Rice Soup

Fantastic! Instead of chopping up all those veggies, I used a bag of frozen "soup" veggies. I through them and my raw chicken breasts into the pot with the stock and seasonings and cooked it until the chicken was shreddable. I threw the rice in there too and cooked it until it was done. I followed the rest of the recipe as is. So creamy and rich! We LOVED it!

This felt so good to eat. I used frozen spinach because that was what I had. You can just thaw it out in the soup. Great recipe!

Blueberry Cream Muffins

Great muffins. The first time I used a crumb topping and the second time I topped them with sugar in the raw. Both were good, but I got requests to go back to the crumb topping. You will wish you added more blueberries. I now add about a cup more.

Reuben Sandwich II

I made this for our family get together and it turned out great. They said it tasted just as good as at a bistro. I basically added a little extra of each ingredient on each sandwich and they were perfect. I also bought rye and pumpernickel bread so my family could choose their favorite version of a reuben sandwich. Delish!

Homesteader Cornbread

I've tried several cornbreads from this site and this one is the one I'm keeping. The texture is just right for cornbread. Moist and sweet, but not cakey. I took the advice of a couple reviews and switched the cornbread and flour quantities. I also added light brown sugar for half the sugar as well as a dash of vanilla. (I like sweet cornbread) It was PERFECT. Again, this will be my staple cornbread recipe from now on. THANKS!!

I followed this recipe to the T and it did exactly what it was supposed to do. Follow the recipe and you will end up with beautiful biscuits! The family loved them and you could actually split them in half without them disintegrating!

Baked Oatmeal I

I LOVE this recipe and I've made it a bunch of times. Here's what I would say. It DOES make a big difference when you put the brown sugar and cinnamon on top rather than mixed in. (I've done both) This recipe is sooo versatile. Great for substituting. I've tried craisins and orange zest, dried apples, dried peaches. I've substituted flavored oatmeal packets for the plain oatmeal. (leave out the sugar in that case) This is a really great recipe! Thank you!!!!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

Wow. This was AMAZING. This totally takes the heaviness out of tuna salad. I love all the crunch and the juicy apples. I used water-packed tuna and diced onions because that's what I had on hand. I also added an extra can of tuna because I could. Served it with Ritz crackers and it was soooo goooood. A new summertime (or bi-weekly) favorite. :)

Broiled Tilapia Parmesan

This was great! I tried this on some crappy frozen fish we had to get rid of in our freezer and it even made them taste good! You could totally use this spread to make parmesan-crusted anything! (steak comes to mind...) :) This would also be great broiled on french bread. Fantastic!

Amusement Park Cornbread

My family loved this recipe, but I found it a bit too cakey. I even changed the ratio of cornmeal to flour like other entries did. I guess I expected the flavor to be more intense than it was. Good, but not my fav.

Banana Crumb Muffins

These are fantastic!!!!! They totally taste like bakery muffins. As for quantity, I doubled the recipe and ended up with enough batter for 24 muffins! (and that was with them puffing over the edge) I'm not sure how anybody could squeeze the regular recipe into 10 cups. But hey, the more the merrier! :)

Spaghetti Carbonara II

Very good. I added a can of Italian-seasoned diced tomatoes and loved it. Without them I feel like it would have been kinda dry. Overall a very good dish and very cost-effective. Thanks!
