Pumpkin Muffins II

Replaced oil with applesauce. Reduced cloves and increased cinnamon. Used almond flour to make them gluten free. Got great reviews by everyone at the party. Very moist. My 3 year old absolutely loved them! Highly recommend.

Fruited Ice Cream

We used peaches and it was really good. Not enough peach flavor though. I would probably double the peaches next time. It might also be good with almond extract.

Zucchini Yogurt Multigrain Muffins

I thought these were great! Very moist. I cut out all the sugar and doubled the spices. I used oat bran instead of oat flour. I also used only almond flour to make them gluten free. My toddler loves them!

Eggnog Blend

This Eggnog is fantastic. We served it at our Christmas party and everyone raved about it. It was completely gone by the end of the party. We made it without alcohol and had a bottle of spiced rum next to it so people could add it if they wished. It tasted almost like a boiled custard and was wonderful with the spiced rum. I highly recommend it.

Marrakesh Vegetable Curry

We did not really like this. The flavor was okay (we doubled everything except the cayenne and cinnamon) but a little too sweet for us. Also, we really did not like the spinach in this dish at all.

Roasted Beets 'n' Sweets

This was great! I took it to a party and got rave reviews even from people who don't like beets. Nice flavor. I spread it out over two baking sheets. I cut everything a little on the small side so probably should have cooked it a little less than I did. But it still came out great.

Hearty Lentil Soup

Great taste. It's really more of a stew than a soup (and we added an extra cup of stock and extra water). In one bowl I added balsamic vinegar and in another added tabasco. Both were great. I highly recommend.

Chicken Pot Pie IX

I doubled the liquid, added garlic powder, and used only a top crust. We loved it. My husband thought it was a bit salty, so I may reduce the amount of salt next time.

Sherbet Punch

We used lime sherbet and served it at our Christmas party. Everyone loved it, and it looked pretty. Some people even mixed it with the red wine and said it was good that way as well. Next time I might add some club soda in place of some of the sodas to cut down the sweetness.

This recipe is wonderful! I think the balsamic vinegar is the ingredient that really gives it flavor. I put in an extra Tablespoon of balsamic vinegar and loved it.

These are amazing! The best muffins I have every had and they are filling. I substituted applesauce for the oil and put in a few extra frozen blueberries. Next time I will try them with a little less sugar to make them healthier.
