Tomato Basil Salmon
About this Cook
I'm 24 years old and living with my fiance in our new house! I've always enjoyed cooking, but since leaving home to go to college, I've found it difficult to get real creative when you're cooking for one or two! Now that we have a house and my own kitchen, I've been revamping some old favorites and trying out new ones.
My favorite things to cook
Just about anything- I grew up on lots of different tastes, and my dad's big pot of spaghetti on his weekdays to cook. Now I'm cooking for myself and a guy who doesn't like plain tomato sauce on pasta or BBQ sauce on anything. My homegrown staples are out the window! I'm slowly working him up to some different things, though, we have a lot of fun in the kitchen, trying new dishes!
My favorite family cooking traditions
Orange-Jello Carrot salad- it's a tradition for the born-in women and men in the family to like it, while the married-in guys and gals are disgusted! Also, we all have our Thanksgiving dishes we each always make, even when we are spread out around the country!
My cooking triumphs
When I try something new and it turns out great, with everyone who eats it giving rave reviews! I am probably my own harshest critic.
My cooking tragedies
Making anything weird, and having it turn out even weirder!! I also made cookies with a friend in middle school, added the amount of sugar as SALT! We duped our younger sis's into tasting it before we told them why it was sooo horrible!!

Egg and Cornbread Bake
I liked this- had to make a few changes as I didn't have any celery or cheddar cheese. I used leftover cornbread, and only added about a Tblsp of chicken broth as the cornbread was already moist. Used TurkeyHam, and laid some slices of swiss cheese across the top. I also scrambled the eggs and poured them over the whole thing; it turned out "quiche-like," with cornbread chunks. I thought it turned out yummy, my husband thought it would taste better with the original stuffing ingredients, as the cornbread made it taste too sweet. I gave it 4 stars and I'll probably make this again for just me or for a potluck, but not for a family meal.

Tomato Basil Salmon
Very tasty. I'll definitely be making this again, however, I'll add more seasonings to the actual fish fillets. ("Marinating" the fish with the seasonings would help too, I ran out of time.) I used the minced fresh garlic as suggested by others - really good. Thanks for sharing - it's really good!

Shrimp Fried Rice II
I had to make a few substitutions/omissions as I did not have bean sprouts, ginger, or green onions, but I'm definitely going to make it again with all the listed ingredients- it was really good! I added corn, peas, and shelled edamame (frozen, I just tossed them in there with the shrimp and heated a little longer.) I tossed some chives on the top for garninsh and voila! Love it! Thanks for sharing!
