Mom's Apple Pie I

I have made this pie several times, sometimes I add in a pinch of allspice and powdered ginger for extra flavor -- perfect! Thanks for the great recipe.

Russian Black Bread

Hearty Vegetable Lasagna

Very good recipe! I've made it several times now, both as written (so good!) and lower fat by cutting the mozzarella in 1/2 and using cottage cheese instead of ricotta, I also added tons of extra veggies to the sauce -- it was very good! This is my go-to veggie lasagne recipe from now on, thanks.

Vegetarian Shepherd's Pie I

Promising recipe but definitely on the bland side. I added in more veggies -- celery and a red bell pepper -- and some indian spices, nutritional yeast, and veggie bullion with the milk. It needed even more, maybe some thyme or sage to give it more of a savory flavor? Also I think the kasha was unnecessary and I might just use all bulguhr in the future.

Plum Blueberry Upside Down Cake

I made this recipe as stated, I had smaller plums and used about 2 cups sliced worth, no berries. It was very good! Like many others some of the sauce leaked out of the springform, I might try this recipe in a regular cake pan next to try and keep the sauce inside. Easily adaptable to almost any fruit you have on hand and infinitely variable by adding nuts/other flavors (such as lemon). Thanks!

Sloppy Sams

Very good recipe, made as directed except I didn't have celery seed and I only used 1 T. of molasses. I served it with cole slaw on top and it was delicious. the only reason I give it four stars is because the taste was more like bbq and less like sloppy joes. But I will definitely make it again, thanks!

Health Nut Blueberry Muffins

So good, much better than another low-fat banana muffin recipe I have used in the past. I will use this recipe from now on. I put in 2 bananas and yogurt instead of buttermilk because that is what I had, still great tasting!

Apple Crisp II

I used a combo of cinnamon, nutmeg, and allspice for the spices, and just used a sprinkle of water on the apples. Other than that as written, awesome recipe -- best apple crisp I ever made, thanks!

Roasted Beet, Peach and Goat Cheese Salad

Very delicious, I just used what I had on hand: 3 small beets, 1 large and perfectly ripe peach, walnuts and green onions. For the dressing I used 2 T. oil and 1.5 T. balsamic vinegar, plus salt and pepper. It was very delicious, the sweet beet and sweeter peach with the sour snap of balsmaic vinegaraette ad punch of onion is perfect. With goat cheese it would have been better (I woudl have lightened up on the vinegar in that case), unfortunately I didn't have any on hand. I piled the salad on some fresh greens, and loved every bite. Thanks for the great recipe.

Veggie Burgers

Okay, when I was mixing these up the smell was questionable and they were super sloppy (of course I didn't wait the one hour for refridgeration) to put together. I DRENCHED them in flour just to get them to form into patties. I thought for sure they would disintegrate on the grill, but they didn't. They actually grilled up into some of the best veggie burgers I have ever made, with good (if a bit light) flavor, a crusty outside and soft middle. Even my super-picky veggie bf liked them and said I should make them again! What a surprise success!

Risotto with Asparagus

Good but I've had more flavorful risottos. Added mushrooms for flavor, probably could have used some thyme as well. Also I tried to cook the asparagus in the risotto at the end which didn't work so great. Next time I'll cook the asparagus ahead of time like the recipe states.

Roasted Beets, Apples, and Fennel

"A winner!" was what my boyfriend said. I made the Honey Mustard Dressing I from this site minus the mayonnaise and used that in this recipe. I still have to get the roasting technique down, I tried cutting the beets and fennel very small but still ended up with slightly underdone beets and applesauce. I might try adding the beets first next time, then the fennel, and finally the apples to get them all done at the same time. Would have been a good idea to save some of the dressing for the end, will do it next time.

Cream of Celery Soup

Good starter recipe, but like many others I cannot bear to strain out the veggies -- so I just blended them into the soup. I used half the broth/milk the recipe called for, no margarine, and a little heavy cream for extra creaminess at the end. Also added in a little extra sage and a dash of nutmeg -- very good, but you have to love celery to like it. Luckily, I do love celery!

Creamy Spaghetti Casserole

Okay, I severely changed this recipe to try and make it healthier. I used fat free cottage cheese and fat free sour cream, and way less cheese -- maybe 1/4 cup total. I also doubled the vegetables, adding in some red bell pepper, peas, broccoli, cauliflower, overall -- pretty good although not fantastic. Needs lots of salt and pepper, I added in red pepper flakes in basil too. Still felt like it was missing something though, but I would make it again if I had the same stuff to use up.

Bean Soup With Kale

I made this very different because I wanted it to be more vegetably for the summertime. I used only 1 can of beans, didn't blend any, and added in 1 diced carrot and 1 diced red bell pepper, plus spicy pepper. It was really enjoyed in this house, and super healthy too, thanks!
