Lemon Chicken Salad
This was really good! I used romaine lettuce and water chestnuts insead of almonds to keep it lower calorie and lower fat. Since I used big pieces of romaine instead of shredded lettuce one cup of miracle whip was what I needed, in this case 1/2 a cup wouldn't have been enough. I did marinate my frozen chicken breasts in lemmon pepper marinade all night and I used more lemmon pepper than the recipe called for. But it made for a very yummy sandwich!

Slow Cooker Pork
This was very good and couldn't have been any easier! I let mine cook for 8 hours and then drained the liquid and shredded the meat. I added a can of black beans and a can of corn and put it back in the crock pot on warm until we were ready to eat. Made taco salads last night and are having tostadas tonite! Can't wait!

Vegan Chocolate Cake
I had my mom make this cake for my vegan brother's birthday, and I must say I was really impressed! I am not a vegan and I was a little afraid to try it out, but it is wonderful! My mom added a bag of non-dairy chocolate chips and that made it gooey chocolatey in the center which was nice. It went really well with a tall glass of ice cold milk lol!
