Asparagus Bruschetta

This was four stars as is and five with a few add-ins. Absolutely delicious. I used Feta cheese instead of blue-thats what I had on hand and I added in some fresh parsley with the basil. It def needs more salt than specified and I added a few dashes of paprika for some mild heat and a sprinkle of sugar. Cannot wait to make for some company.

Honey Roasted Red Potatoes

These were so awesome. I didn't change a thing except added more than a pinch of salt. Once I poured the sauce over the potatoes I mixed to make sure they were nice and coated. And then did the same twice during baking. My baking time was 45 minutes. PERFECTO! Will be making this plenty in the future.

Roast Beef Horseradish Roll-Ups

Yum! I made a bunch of different roll-ups for a lunch party and these were my favorite. I used a Boars Head prepared horseradish sauce and instead of shredded cheddar I just used yellow american. Didn't have four hours to let them sit..more like 1 1/2 and they were just fine to cut. Will make again. Thanks for the share.

Chicken and Broccoli Braid

Wow..What a great appie. The only change was to sautee the brocolli, pepper, and onion in oil for ten minutes prior to mixing with the other ingredients. Simple easy and delicious. People not only raved..but they thought I had bought it and just heated it up. Now thats the best compliment you can get!

Sweet and Sour Meatballs

OK-so I cheated as well and used frozen cooked meatballs from Costco..that being said 5 stars for the easiness and the delicious sauce. Will keep this recipe for future parties or potlucks. I cooked on low for 4 hrs or so and they were perfect. Tossed on some toasted hoagies and sprinkled mozz cheese on top...MMMMMMM! Doesn't get better than that. Even the kiddies enjoyed and asked to have again the next night.

Cream Puff Shells

Four stars just because I didn't like the shortening. 5+++ stars using butter. PERFECTO! I fill these mixing a box of instant vanilla pudding(not store brand-the good brand)with a milk and heavy cream mixture that is recommended on the box(on the box recommends milk but use half heavy cream as well-so much more delicious) What a perfect cream puff. I also drizzle choc on top of them. People do think I buy them at a bakery.

Roast Pork with Maple and Mustard Glaze

What a sweet and delicious glaze. I did use the real maple syrup and the glaze was very runny so I just poured it all over the roast turning in the roast pan to coat extra good. I did stuff some fresh garlic in various slits in my roast and that just added a great flavor. I cooked my 4 1/2lb roast for 30min on 400(to brown nice) and lowered temp to 350 and cooked another 1-1 1/2 turning roast midway through. I took the roast out of the pan and just put the pan right on the stovetop on medhigh and cooked the drippings mixing in a water/flour mixture until thickened. YUMMY! Served with mashed potatoes and it was a hit. Def a sweet gravy so beware before pouring all over your plate. Will make again and again.

Carrots Au Gratin

These are sooo yummy. Even all my very finicky eaters gobbled it all up. Maybe not the healthiest root for a veggie dish but can easily be made healthier by using low fat ingredients. I did use butter this time since that's all I had on hand. The only change next time is I will scale the flour down a touch to avoid a more floury Gratin sauce. Don't pass this up.

The Best Meatballs

Have made these time and time again as stated and altering slightly with what I have on hand. I prefer using the day old bread but have used italian breadcrumbs(2 cups not needed-more like 1 1/2 cups) and have even used both stale bread and italian breadcrumbs. All good variations. I add water until I get the softness I like. Usually 1 cup-if you dont like soft balls you can tell when mixing wether they will be softer or harder. I do broil mine 5-8 minutes then flip and broil for another 5 minutes and toss in my sauce. Whatever is left I freeze. Simply wonderful. Meatballs are suppose to be simple and delicious-with just a few seasonings to make them grand- please dont let the person who rated them as BLAND..stop you from trying these(maybe they should try meatloaf-hehe) These are the bomb.

Slow Cooker Chicken Taco Soup

This was very good. I did follow the top review and made Bill Echols Taco Seasoning. I used red kidney beans for the chili beans..and I also didnt have diced tomatoes w green chilis so I just bought a tiny can of green chilis and used half of that. I too served with a dollop of sour cream and shredded cheese and it balanced the heat nicely. And how fun to scoop the soup with tortillas...YUM!!!This is a perfect superbowl or potluck dish that I cannot wait to try on my friends. Thanks for the share!

Chocolate Covered Strawberries

I've made these for so many years and they are so delicious. First I lay a sheet of waxpaper on a cookie sheet. I'm usually impateint so I toss my chips and shortening in a microwave safe bowl and cook for 45sec-1minute. I stir until smooth. Then instead of the toothpick I just hold by the green stem and dip them then lay on the waxpaper. I put the whole sheet in the fridge for 15 minutes to set up and if I feel like it I will melt a small amount of white choc with the shortening and drizzle with a spoon back and forth over the strawberries. Back in the fridge and they are set up nice and good to plate and present. I do like using semi-sweet choc better for a richer taste but the milk choc is great as well. (if you really have time and want to impress see stuffed strawberries recipe on this site then follow this one-HOLY GOODNESS!)

Slow Cooker Chicken Stroganoff

This is my new favorite crock-pot chicken recipe. So easy and so delicious. I didn't have margarine so I used regular butter and for the italian mix I used good seasons. So delicious. I did cook mine for 5 hours and that was plenty adding in the soup and cream cheese at the 4 hour mark. Served over egg noodles. Will make again and again.

Slow Cooker Chicken and Dumplings

I used 7 to 8 boneless chicken breasts, 3 cans of cream of chicken soup, approx 1.5 cups of water but will use chicken broth next time, 3 springs of fresh rosemary, dash of thyme, dash of sea salt, 1 bag of frozen peas, 5 potatoes cut up, 7.5 oz of buttermilk biscuit dough, next time will add carrots. This recipe is delish and will definitely make again and again. Thanx

Rick's Special Buttercream Frosting

MMMMMMMMMMMMM! This is my new GO TO recipe for frosting. Great taste..great spreading consistency..the only problem is that you will be left with a spoon hovered over the bowl telling yourself..just one more spoonful. I did use half butter half crisco for my taste preference and it was perfect. Will make again and again.

Zucchini Summer Soup

OK..this soup is certainly different. Can't put my finger on what is missing. The spices need to be played with quit a bit to get the right taste. I did in the end mix together 3 egg yolks with 1/2 cup heavy cream and gradually added that into the soup. This improved the flavor for me tremendously. I'm not sure if I'd make again given the time it takes to prepare. But maybe..just maybe.

Feta Cheese and Bacon Stuffed Breasts

This was very good. I marinated my chicken in buttermilk for a few hours-for the ultimate moistness(if no buttermilk 2 cups milk with 2 tbsp vinegar or lemon juice) I made extra bacon and crumbled it up and mixed it into some crumbled feta(didn't have sliced)and added a dollop or two of sour cream to hold it together good. I did add in some fresh parsley to that as well. I made a slit down the side of the chicken and stuffed away. I do wish that I added more of the stuffing. It is the best part. I poured on the oil mixture after I stuffed them(which next time I will only do half-not necessary to have all that oil) Will make again.

Truck-Stop Buttermilk Pancakes

These were very delicious. I did have to make my own buttermilk with milk and lemon juice(5 cups milk-5 tbsp lemon juice)..but I cant wait to make them again when I go out and get some pre-made buttermilk. I bet they will be even yummier. It made a ton of pancakes which I like because I freeze the leftovers for a quick and easy breakfast in the morning for the fam. Pop in the microwave for 30 seconds and they taste just as delicious. THANKS!

Soft, Moist and Gooey Cinnamon Buns

10++ stars for sure. SO GOOD! Much better than "clone of a cinnabon". Moist and delicious. I did make a day ahead of time- after the bread machine cycle I cut them up and put in the dish to rise for the hour-then I wrapped in plastic wrap and popped in the fridge. In the morning I took them out and let them sit at room temp for about 45 minutes and popped into the oven...HOLY GOODNESS! Cook time for me was more like 25 minutes(probably cause I had them in the fridge overnight) The only change for me was I do prefer the frosting to be cream cheese based so I made it that way( 4oz cream cheese, 1 1/2 cups conf sugar, 1/4 cup butter and a squirt of vanilla) Thanks for my new favorite recipe!

Mexican Pasta

This was a nice cross between italian and mexican. My husband was confused at first bite because he expected a nice tomatoe sauce..but then was pleasantly suprised with all the delicious mexican flavors. I did add sour cream to the sauce the last few minutes of cooking and topped with some shredded cheese. I also used spaghetti because that's the pasta the kiddies wanted. Will make again for a different but good dish.

Brazilian White Rice
