Radishes Simmered with Thyme

I had a nearly full pound of radishes that needed to be used. Salad making wasn't using them fast enough and the kids wouldn't eat them anyways. Stumbled on this recipe because a photo on the home page photo contest. They turned out pretty good. Reminded me of turnips. The kids still wouldn't eat them, not even a taste, but I will still make them again when I've got a surplus of radishes. I baked them covered in the oven at 350 for 30 minutes.

Korean Cucumber Salad

Pretty good, but the kids couldn't handle the heat. I had to substitute red onions for green onions, only because my green onions had wilted. I will make it again with green onion.

Cheesy Creamed Spinach

Excellent. Only had 2 slices of Provolone cheese and 1 T Parmesan, so I added 2 ounces of sharp cheddar. I cut the butter back to 1 T and sauted 1/2 onion in the butter before adding the cheese.

Basic Chicken Salad

I used left over grilled chicken quarters. I did not have any almonds, so I used pistachios. I also added a teaspoon of chopped capers and 1/8 teaspoon of dry mustard. Two thumbs up!

Will's Spicy New Orleans Catfish Fries

Had to use corn meal, couldn't find corn flour. Added a T of seasoned salt to the mix. These made excellent catfish po'boys on toasted french rolls topped with shredded cabbage, carrots, and spicey tartar sauce.

Tartar Sauce I

Excellent as written. I had limes on hand, so I used lime juice rather than lemon juice. Let the flavors meld for an hour, and tasted, excellent. Decided to mix in a teaspoon of dillweed and a half teaspoon of chopped capers. A couple hours later and excellent was fabulous!

Sweet Restaurant Slaw

On its own, this slaw is a little too sweet for my tastes, but on a pulled pork sandwich with chipolte bbq sauce,watch out taste buds!!! Excellent. I did not have salad dressing or poppy seeds, so I used mayo and celery seed. Next time with fish, I will cut the sugar back by 1/3, but with bbq will make again as written.

Port Huron-Style Coney Sauce

I was out of ground mustard. Instead of a potato masher, I used a whisk to break up the meat in the water and spices. I doubled the recipe and let it cook for several hours. Everyone loved it, they not only used it on the dogs, they used it on the fries too. The recipe sounds weird, not browning the meat first, but it was so tender. This coney sauce was the best I've tasted.

Pistachio Cake III

I turned this into a layer cake with lime frosting. Turned out great. Was a hit. The only things I changed was using only 3 of the 4 eggs, and cut the water back by 1/4 cup. No problems at all. Very moist cake. Delicious.

Chick and Ox's Pig Pickin' Sauce

The best for pulled pork. We smoked a Boston butt, and I served Chick and Ox's sauce. Very good on pulled pork sandwiches piled high with slaw and pickles.

Tom Ka Gai (Coconut Chicken Soup)
