Amy's Garlic Egg Chicken

Made this with chicken tenders since that's what I had on hand. Kids (age 4 and 6) loved it and asked when I can make it again. I did make a few subs to the breading, to accommodate my gluten-free/dairy-free hubby - crushed up rice chex and no cheese. Will definitely do this one again!

Brown Rice Breakfast Porridge

Very tasty! My daughter loved it (she's a big oatmeal fan). I used raisins and brown sugar instead of blueberries and honey since that's what I had on hand. A keeper for when we have extra cooked rice on hand.

Garden Fresh Tomato Soup

Very easy and tasty! I used a handheld submersion blender to make it nice and smooth. I opted to add some Italian seasoning for a little more flavor, and I used gluten free flour and dairy free margarine. Now hubby can enjoy it too!

Peanut Butter Ice Cream Topping

This was AMAZING!! I only rated it 4 stars because I used only 1/2 c of sugar, 1/2 c of water and an extra big scoop of peanut butter. It melted together beautifully and was creamier than I expected. I served it with chocolate syrup over bananas for dessert. I can't wait to try it over ice cream!

Extra Easy Hummus

Added some lemon juice, as recommended by others, and didn't exactly measure the other ingredients. My 6 year old daughter gobbled it up, but my 4 year old son apparently has not yet acquired the taste!! I'll keep trying with him, because I really enjoyed this.

Marshmallow Fondant

This was a fun experiment I did with my kids tonight. They had a ball cutting out random shapes. I'm anxious to see how it is to roll it out tomorrow. I pretty much followed the directions, but I decided I didn't need any butter.

Cream Cheese Candies

So easy, so addictive! I followed the advice of using 8 oz of cream cheese, 2 lb of confectioner sugar and 1 t of peppermint extract. My kids and I added some gel food coloring to make pink for Valentine's Day and yellow for the Steelers :) Can't wait to share them!!

Broccoli Cheese Soup

The taste of this soup is great, but it doesn't look all that appetizing. I find that I need to add a little milk to it when I reheat it. I've added extra veggies - the version I made tonight had broccoli, cauliflower, carrots, and potatoes in it. I also used shredded cheese instead of the "cheese food". Nice to know that I could make it gluten free for my hubby too!

Cranberry Salad I

Yummy!! My quantities weren't exactly right, but it was really good. I didn't use the banana, and when I do it again I want to try with mandarin oranges. Definitely cut back on the sugar!

Chocolate Pretzel Rings

I love to make these! Instead of using chocolate kisses, my hubby and I like using white chocolate wafers and Reese's Pieces. Crispy, salty, creamy, sweet - this has got it all!

MMMMM... Brownies

Never tried making brownies from scratch before, but this was VERY easy!! I doubled the recipe, but didn't have a 9x13 pan clean for it. Ended up using something a little smaller, so the brownies turned out a cross between brownies and cake. When I make this again, I will make sure I use the correct pan.

Baked Spaghetti

Yummy! I didn't give it 5 stars, just because I didn't follow the recipe exactly. I did use the cottage cheese, but I added that to the spaghetti, butter, egg, and cheese mixture. I also used 2 jars of pasta sauce, and assembled the dish in layers: on the bottom sauce, spaghetti, sauce, cheese, spaghetti, sauce, and cheese on top. My 3 year old, who can be quite picky especially when it comes to leftovers, loves it and has willingly eaten it several times this week.

Bran Muffins II

I've been enjoying fresh muffins for a few weeks now, and I love it! The first batch I did plain bran with a few raisins and brown sugar sprinkled on top. The second time I added cooked diced apples and more raisins. I really liked that version! This last time I added shredded zucchini and more raisins. I think I used too much zucchini because they were a little mushy inside, but still tasted great. I am thinking of trying blueberries too. So easy and I eat them guilt free since I subbed some whole wheat flour and used applesauce instead of the shortening.

Corn and Zucchini Melody

I really liked this (what's not to like about bacon and cheese!), but my family disagreed. I did sub turkey bacon and added some diced red pepper too. Not sure if I'll make it again, but it gave me some ideas of other combinations to try!

Rhubarb Cherry Crisp

I really liked the flavor of the almond extract. I wish the topping would have been a little more "crisp", but I didn't use any nuts in it due to allergies. I also used lite pie filling so it wasn't SO sweet. Yummy!

Ham and Cheese Puffs

I love these little bites! I've made them numerous times, and everyone at my church loves them. I've done a few different variations - turkey bacon, ham, and veggie (finely chopped and sauteed bell pepper, red onion, and broccoli). They all go over very well for our coffee hour snack time.

Triple Berry Crisp

The oatmeal crust and topping is fabulous!! I even cut back butter to 1 stick and substituted whole wheat flour for white flour. Can't wait to eat more tomorrow!
