These are delicious! They totally melt in your mouth! I didn't have any margarine, so I used butter instead. These will definitely make an encore in our house!

Banana Pudding I

This was fantastic! I was looking for a banana pudding for Thanksgiving that tasted like Mom's. I doubled the recipe, as suggested by other reviewers. I still used an 8 x 8 pan and added two more bananas. Everyone love it! I will definately make this one again!

Chicken Marsala

Fantastic!!! The mushrooms were tasted just like butter! I used the Tyson trimmed and ready chicken breasts...they didn't need to be pounded because they were already the correct thickness.

Smothered Mexican Lasagna

This was great! I was worried about it not requiring any shredded cheese, but it wasn't needed;The ricotta gave all the cheesy flavor needed! My husband couldn't even tell it was ground turkey instead of ground beef! We will definately make this one again soon.

Beefy Mushroom Barley Soup

This has a fantastic flavor, but way too many mushrooms for our taste. I will make it again, but will only use about 4 oz. of mushrooms next time (instead of the 16 oz. the recipe calls for) and increase the amount of carrot and celery. In addition, I doubled the amount of beef bouillion, as suggested by another reviewer.

Corn Bread Mix

This was a really good recipe, but I did make some changes. I used white corn meal and a heaping cup of sugar in the mix. When I prepared the corn bread, I used 1 and 1/4 c. of milk. This produced a moist corn bread.

Salsa Chicken Rice Casserole

This dish was FANTASTIC! It was full of flavor and very satisfying. Instead of using chicken breasts, I used drained, canned chicken, which worked well. We can't wait to have this one again!

Shortbread Cookies II

These did not turn out very good at all. First, they would not go through the cookie press very well, so I decided to try to roll them out and make traditional rectangular shortbread. This did not work well either. So, I simply formed them into the shape and baked. They tasted okay, but did not remind me much of the shortbread I had while in Scotland. I don't think I will try this one again.

Pebber Nodder (Danish Christmas Cookies)

These had almost no flavor. They definately need more cinnamon. Also, I think they would taste much better if they were rolled out on powdered sugar instead of flour. Both would help keep them from sticking, but the sugar would add some much needed sweetness.

Quick and Easy Brownies

These were wonderful! I took the suggestions made by others and increased the chocolate to 3/4 c. and decreased the flour to just a smidge over 1 c. They weren't too fudgy nor too cakey. Perfect! I didn't bother putting in the nuts or icing on them. They didn't need it! I gave it 4 stars instead of 5 because of the changes I made.

Stuffed Manicotti

This recipe was really easy and had a good flavor. I gave it four stars because I made some changes. The recipe called for 14 manicotti shells, but you really only need 6-7. As suggested by other reviewers, I cooked the shells until they were almost done to prevent splitting and I added 2 tsp. of minced garlic. This provided enough for three servings (2 manicotti each). I will definately make this one again.

Mushroom Beef Skillet

YUM!! The only change I made was to add 1 tsp. of corn starch (with about 1 Tbsp. of water) at the end to thicken the sauce. As stated before, this can also be done by adding a little flour at the end. The flavors were fantastic and the meat was very tender. We will definately have this again soon!

Mongolian Beef I

This was a wonderful recipe. I was origionally worried about the red pepper being too hot, but it was a perfect amount. The recipe says this serves six, but it served more like three or four. I should have doubled the sauce as suggested by other reviewers. I did use lite soy sauce and did not have to add any additional salt (which is unusal for me). I can't wait to make this one again!

Cheesy Macaroni and Beef Casserole with Thyme

This was really easy to make and makes quite a bit. If you do not care for the taste of thyme, I would cut the amount it half. The thyme was very prodominate. We loved it and can't wait to have it again.
