Turtle Bread

Reviewed: Jan. 10, 2009
I had a ball making this for my next-door 2 yo twins' birthday this morning. Doubt I'll get a bite of it, so I can't rate on taste, but it is quick and easy and TCFW. I used 3 raisins for each eye and I don't know what instant yeast is so I just used my regular "active dry" and it seemed to work just fine. A great kids' recipe. Thank you for posting it. One of the boys liked it so well he said my name for the first time!

Sweet Russian Cabbage Soup

Reviewed: Jan. 3, 2009
I enjoyed this simple recipe. The proportions and timing are great. It is true peasant food so it doesn't get the five stars of, say, elegant oyster soup, but it's a great way to get your cabbage.

Boiled Bagels

Reviewed: Jan. 1, 2009
While I am an experienced bread baker, this morning was my first attempt at bagels. The outcome is that I'm quite satisfied with taste and texture. I used several reviewer tips both for the good and the bad. I mixed the dough in my Kitchen Aid mixer and needed to add an extra tablespoon or two of warm water to get the dough to form a ball. I should not have let the shaped bagels rise for the hour that a reviewer suggested. I didn't realize the bagels would continue to rise in the simmering pot! Yikes! It was a little alarming. I used an egg wash before my seed toppings. And I followed the boiling and baking times precisely. Four stars only because I feel the directions didn't have enough "if you don't do this, the bagels will __________" type of information for beginners. They also don't tell me at which step I could add raisins etc. It took me 2 hrs. start to finish. Too much time to do on any but lazy holiday mornings like today.

Lemon Coolers

Reviewed: Dec. 22, 2008
The practical beauty of these light cookies is that you can keep the few ingredients on hand in the pantry/freezer at all times for quick refreshments for those unexpected occasions. Yes, the batter is sticky but I used a very easy technique to overcome that. I mixed in the KA and used the two iced teaspoon method to drop dollops in a shallow bowl of powdered sugar. Use one of the spoons to dust with sugar, then it's very easy to roll into a ball for baking.

Awesome and Easy Creamy Corn Casserole

Reviewed: Dec. 17, 2008
I made this Thanksgiving a year ago and am just catching up on my reviews. I had made this ahead of time and froze it beautifully. Everyone loved this dish tho' it seemed almost too much as a side for all the other rich foods on the table for that meal.

Cinnamon-Apple Chex® Mix

Very easy and a little less salty than the other Chex mixes. I followed the advice to let cool before adding the yogurt raisins and I used Corn Chex instead of Wheat, just because.

Cream Cheese Mints

Reviewed: Dec. 15, 2008
4 stars from me only because the recipe is so simple. I just made two batches for Christmas, one pink and one light green. I mixed the "dough" in my little Oskar and I used my cookie press star disk. They look professional! Instant gratification. For the pink batch, I followed the recipe precisely except for my substitution of peppermint extract for oil. That batch was very stiff and hard to press and would be best for hand shaping. The green, second batch I kept a little less stiff (@2-1/2 cu sugar) and it made all the difference in the pressing designs. I dusted them with more confectioners sugar to make it look snowy. I am delighted with this project! I'll definitely make these again. If I can figure out how to post pictures, I'll definitely post one of these.

French Onion Soup Gratinee

Reviewed: Dec. 7, 2008
I didn't have the fresh thyme, but otherwise I made this exactly as directed. We enjoyed it very much and I'll hope to make it more often. The diameter of my bowls was too large for the bread and cheese to neatly seal, but it was still very good. A great change of pace on a cold evening. I served it with a romaine/pear salad.

Ranch Oyster Crackers

Reviewed: Nov. 22, 2008
I'm giving this 4 stars only because it's so simple. My 10 oz. bag of Nabisco Premium crackers measured about 5-1/2 cups. I used Mrs. Dash's lemon pepper and twice the indicated garlic powder because my family loves it so. Next time I'm going to sprinkle in just a tad of cayenne.

German Apple Cake I

Reviewed: Jan. 19, 2008
We are really enjoying this cake. I used about a half cup of demerera and a quarter cup of white sugars. My other change was using a small applesauce cup into a 1 cup measuring cup and filled it with canola oil. Next time I will add a lot more cinnamon and maybe walnuts if I have some. I topped with powdered sugar. Just perfect. Obviously it is a very forgiving recipe and you can add or subtract anything to suit your taste, budget or what's in the pantry. Thanks for posting.

Roquefort Pear Salad

There were way too many complicated, competing flavors in this for us. While we loved the pear and roquefort combination, we felt it would be just as good without avocado, pecans, onion and garlic.

Apple Pie by Grandma Ople

Reviewed: Dec. 26, 2007
I thought 1,200+ 5-star ratings seemed too good to be true....but this recipe deserves it. I baked one Christmas Eve for yesterday's dessert. OMG! It was, first of all, the prettiest pie I've ever baked. Pouring the syrup over the lattice really makes it crisp up beautifully. And, secondly, the taste was marvelous. I impulsively added a small amount of cinnamon to the syrup at the last minute out of sheer habit but I wouldn't have needed to. Thank you very, very much for sharing this keeper. I WILL be making it again. ***raising a glass of egg nog to Grandma Ople***

Cranberry Relish I

Reviewed: Dec. 23, 2007
I just made this for the 5th or 6th holiday meal and want to add my endorsement for this recipe. It's easy to make a day or two ahead of the meal, but it tastes very complicated! I use a Valencia orange with great results. They're a thin skin, juicy, mostly seedless orange which is generally available at this time of year.
