Ramen Noodle Stir-Fry
Great idea to use Ramen Noodles. We used marinated chicken and made our own sauce (since my chicken was teriyaki flavored, a teriyaki sauce). Like I did when I was in college, I just put the ramen in a 2 cup measuring cup full of water and microwaved it for 3 minutes - stirring once - to cook the noodles - then drained - turned out perfect. Thanks for the idea, Ramen was a nice change from rice.

Salmon and Pesto with Rice
Easy! This recipe was very easy...I didn't have white wine so I used extra dry Vermouth. I cut the recipe in 1/2 for two people with left overs. I left my fillet as one big piece and sprinkled Parm over the top before serving. Try it, it's a great weeknight meal.

Pepper-Crusted Beef Tenderloin with Chocolate-Port Sauce
Yummy! My husband made this for my birthday, knowing that I love fillet and chocolate. He did reduce the chocolate to about 1.5 oz, which was perfect. We don't have peppercorns or coarse salt on hand, so he used the basic kitchen variety of salt and pepper and still resulted with a bit of a pepper crust. Good enough if that's all you have on hand, but I am sure the fresh crushed peppercorns would have really crusted up nicely.
