Margarita Chicken II

These was pretty good. Only made a few changes...we added shredded white cheddar and monterey jack cheese. Also, instead of tequila we added some of Jose Cuervo's golden margarita.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

Good quiche. I used sun-dried tomato basil feta instead of goat cheese. Adding pesto to the quiche was a great idea! Will make again.

Taco Avocado Wraps

These were really good! It does make a lot of cream cheese/sour cream mixture though...we made 5 wraps and still have lots of it leftover. Great for lunch or a light dinner.

I loved this pasta. I used regular balsamic vinegar and shredded parmesan cheese instead. Skipped the "crisping" step but it was delicious!

Kathy's Baked Stuffed Tomatoes

The stuffing was good - although I doubled the amount of feta, used fresh spinach, and used a combination of shredded and grated parmesan cheese. Cooked for slightly more than 20 minutes. However, when I took the dish out of the oven there was water in the bottom and the tomatoes were soggy. Hubby wasn't a big fan.

Shrimp and Dill Deviled Eggs

These were good. I bought shrimp already cooked and diced them as opposed to using canned shrimp. The shrimp adds a nice subtle flavor.

Guacamole Cilantro Lime Cheeseburger

Really good burger! We used turkey instead of beef and cut the recipe in half. The guacamole is very refreshing on toasted buns. Served with sangria for a nice summer meal.

Vegetarian Baked Pasta

Amazing! Very cheesy - but I love cheese. I used Bertolli's portobello mushroom with merlot sauce. Cooked for 25 minutes and it was perfect! Will definitely make again.

Sausage Apple Quiche

This is so delicious! I love quiche and I'm always looking for new recipes - this one is definitely a keeper! I only made a few slight changes: I used 2 chicken apple sausage links instead (6 oz.), shredded asiago cheese instead of swiss, and half of a Granny Smith apple. It took a little longer to bake...I baked it for 20 minutes at 425 degrees then I reduced the temperature to 350 and covered the crust with aluminum foil so the edges wouldn't burn and baked for another 20-30 minutes.

Tater Tot Taco Salad

Unfortunately, we found this somewhat bland. I think that it would be much better if the tator tots were seasoned. We used ground chicken instead of beef, added onions to the meat, and a layer of refried beans on top of the tator tots. I would've added tomatoes too if I had them. UPDATE: I added guacamole, salt & pepper to the leftovers and left out the sour cream and lettuce and it was much better!

Smothered Mexican Lasagna

I made several of the changes recommended below...omitted the water, added garlic powder to the ground turkey, mixed 1 can of refried beans with 1 jar of salsa to create more layers in the lasagna, and added a few layers of shredded cheese. However, it was still a little bland and a little too soupy for us. It wasn't bad, but I won't be making it again.

Egg Salad Cheese Spread

The relish was a bit too overpowering for me - I used shredded Italian 4 cheese blend and I could hardly taste the cheese. I love cheese and was excited to try this, but I prefer more traditional egg salad.

Cheese Sauce Over Cauliflower

Sauce was very good - I tasted it with 1.5 cups of cheddar and it wasn't quite flavorful enough so I added an extra half cup of cheese and it was just right. However, I steamed one head of cauliflower and ended up with LOTS of leftover sauce - so I'll cut back on everything in the future. The paprika and parsley were the perfect touch.

Asiago Sun-Dried Tomato Pasta

One of the best pasta dishes that I have ever made! I only made a few changes: omitted the chicken & bacon because we don't eat meat, added an extra clove of garlic, and used 1 cup of shredded Asiago instead of 1 tablespoon. Also, I used sun-dried tomatoes that were packed in oil - no problems with them being chewy. So rich and delicious! I definitely recommend this one.
