Mandarin Mixed Green Salad
Of all the orange salad recipes on this site, this one has the most potential in the dressing. The dressing alone merits 5 stars, though I do think the rest of the salad could have a little more substance. It's perfect as a flavorful side salad as is, but to make it a meal, I would take some of the recommendations and add dried cranberries, or maybe some thin strips of chicken to make it more filling. But, as it stands, great fast recipe.

Tofu Creamed Spinach
This recipe was easy and pretty tasty, I liked that it cut out a lot of the fat. What's nice too is using it for leftovers, I put it on a pizza crust with sliced tomato, basil leaves, and some mozzarella for like 20 minutes at 400 in the oven, and had a nice relatively healthy spinach pizza.

Creamy Spinach Tortellini
I've made this recipe for a few years now (we always called it tortellini primavera) and every time I make it, I make a few changes. To cut down on fat, as many people mentioned, use skim milk, and instead of fat free cream cheese (which I've found really does significantly affect the taste negatively) I use neufchatel cheese which has about a third less fat but retains the flavor. Also, I've never made it with cherry tomatoes, either just chop up some plum tomatoes, or try using a package of sundried tomatoes instead for a little more interesting flavor. Baby portabellos can be substituted for white mushrooms, etc. This recipe is one of my favorites and has room for lots of possibilities.
