Burrito Pie
Yummy!! It's just me and my husband, so I halved the recipe. We still had enough for 2 nights. I used an 8x8 dish. I chopped 1/2 of a large yellow onion. Sauted it in butter. Added minced garlic. Added 1 lb ground beef.Add 1/2 pack of taco seasoning. When the meat was cooked I added 3/4 can of black olives(sliced),a whole 4oz can diced green chilies, 1/2 of an 8oz bottle of hot taco sauce(hubby doesn't do spicy)I then gave it 2 big squirts of the mild green taco sauce, 1/2 can of tomato sauce(I don't do diced tomatoes)and let simmer for 10 to 15 min. I heated up a can of refried beans. I then began layering. I sprayed the dish and put down 2 tortillas, then beef mixture, then grated cheddar (it's what I had)then following other suggestions I smeared the refried beans on a tortilla and place it bean side down added another tortilla and repeated the layer again. Then I added the last of the meat mixture and more cheese and the rest of the olives. I used approx. 12oz grated cheese and 6 tortillas total. I then baked for about 30 min at 350. This was the perfect amount for me and my hubby for dinner and leftovers.

Grilled Venison Backstrap
We only eat Game meat, so I am always looking for different ways to prepare it. I was very surprised that I didn't need to add any seasoning to this meat. I was going to, but decided to prepare it as stated in the recipe for the first attempt. I am glad I did. This was perfect. I marinated it in apple cider for 3 1/2 hours, then in classic BBQ sauce for 3 hours. Then I wrapped in bacon and secured with toothpick. When I placed them on the bbq, I did not leave. You wouldn't walk away from a pan of frying bacon would you? Once the bacon got crisp, I moved the meat to the other side of the grill.The side that didn't have heat and closed the lid, so that the bacon and meat could cook a little longer without burning. When I told my hubby how I cooked them, he raised his eyebrows (big time skeptic). Then he took a bite and said "MMMM make sure you write down the recipe" Thanks for the recipe!!

Mock Peanut Brittle
My step mom loves this stuff!! She can't eat real peanut brittle because of her teeth. I don't know how much it really compares to real peanut brittle, but who cares! This is yummy!! Just don't cook the sugar and corn syrup to long or it will be hard.I used generic cornflakes to cut down on cost and you can't tell. My husband calls it Oakey Peanut Brittle.
