Broccoli Cheese Soup

AWESOME!!! I used 1 1/2 pounds of fresh broccoli florets, I added my cornstarch to one of the cups of cold milk, and I omitted the 1 cup of water...it was perfect! Thank you for such a great recipe for my favorite kind of soup!

Chicken Pot Pie IX

YUM! I doubled the celery & added mushrooms (my family loves them), seasoned with Essence, and baked the bottom crust for 7 minutes before filling. My 5-yr.-old couldn't wait, so I gave him a few spoonfuls of filling to eat while it baked. Again, YUM!

Tommy's Ham Casserole

We really enjoyed this one, although I did doctor it up a bit (can't help myself sometimes!). I sauteed some onion & celery in butter, then mixed it into the cooked macaroni...stirred in the other ingredients and added an 8.5 oz. can of peas (drained). Yum!

Black Bean Salad

This is an awesome recipe! I can see me making this again and again! Also a nice topping for fish & chicken. Just poach fish (I use salmon or tilapia)in orange juice, and spoon some of this on top or on the side. Serve with coleslaw, potato salad, or macaroni salad..yum!

Shrimp Scampi Bake

This was DELICIOUS! Cut recipe in half, used 2 cloves of garlic, and served over angel hair (usually try the recipe how it's written to begin with, instead of screwing it up right off the bat) Yummy just as it is, but hubby suggested adding toasted pine nuts, I thought about adding some pesto...the possibilites are endless! Drizzled butter/garlic mixture over pasta, tossed, then topped with shrimp. My son, by the way, ate all the shrimp & pasta on his plate and continued on to mine!

Puppy Chow I

Made this for a snack for my son's preschool...very easy and delicious, too! I used Cheerios...bought the wrong-sized box, so I added Rice Chex & Reduced Sugar Coco Puffs (worked out well). Thanks for such a good one!

Crispy Cucumbers and Tomatoes in Dill Dressing

Just what I was looking for! Had 4 tomatoes, red onion, & 1/2 cucumber on hand. Added a jar of marinated artichoke heart (drained), a handful of pimento-stuffed green olives, and a clove of garlic (minced). Delicious!

Chicken Piccata II

This is a keeper! I followed the advice of previous postings and pounded the chicken into cutlets. I also added fresh mushrooms & capers during the last 20 minutes of cooking...it turned out restaurant quality. I'll definately make this again and again!

Broiled Tilapia Parmesan

DELICIOUS! I used "Just 2 Good" mayo, light margarine, and fresh Parmesan (grated it on a box grater, then chopped it fine in my food processor); cut the recipe in half for 4 fillets...my husband had 2, I shared 1 with my 23-month-old (who wasn't feeling well, but had no trouble eating lots!), and I now have some for my lunch tomorrow! Served it with rice pilaf and a tossed salad. Seasonings were nice & light, didn't overpower the delicate flavor of the fish. A new staple in the ol' recipe box...thanks!

Ham Salad II

AWESOME! At first, I thought it was just okay and decided to "doctor it up" in the morning...make this the night before, and let it set in the fridge overnite...Big Difference! I used half sweet pickles and half dill (couldn't decide!), and I also ground it up in the food processor. Our local deli's is very good, but this was so much better...thanks James!

Broiled Scallops

This recipe is delicious and simple. You can adjust the garlic/salt/lemon ratio to suit your taste, and the end result was even better than I expected! Served with herbed butter noodles on the side & asparagus vinaigrette...my husband had 3 servings of everything!

Baked Slow Cooker Chicken

I couldn't believe how delicious this was compared to the ease in making it! I didn't cut up the chicken, I just seasoned it to taste (I put some celery stalks inside the body cavity for extra flavor). Gotta go...I have to e-mail this to all my friends!

Pig Picking Cake III

I've been making this for years (but without the walnuts...I'll have to try it that way next time!), and I've always gotten RAVE reviews! It's nice & light, not too sweet with a heavy frosting (perfect for the "I don't eat sweets" crowd)...just right for spring & summer! And the icing...I've literally had people just eat the icing right off of the cake! I've also seen folks scrape the leftover moist "goodies" from the pan after the cake is all gone (I'm a guilty gal on that escapade as well!)!!!

Mushroom Pork Chops

We really enjoyed this recipe! I had just made pork chops the night before, so I used boneless chicken breasts instead...they were delicious! I just sprinkled them with our favorite seasoning salt (BAM!), and followed the directions for the pork. Definately a keeper!

Linguine and Clam Sauce

WONDERFUL! This is the best clam sauce I've ever had! I made a few changes to use what I had on-hand (try using whole baby clams...yum!). My husband raved over this, while my 14-month-old shoveled it into his mouth with both hands!

Cornucopia

I've made this twice (Thanksgiving & Christmas), and I got raves both times! I filled it with every veggie I could think of (raw asparagus and green onions looked especially nice), and I served dip on the side. All the veggies were eaten; then my mother-in-law asked if she could keep it to break up & serve with chili after Christmas! I'm a floral designer, so this year I'd like to make one and varnish it to keep for a silk flower arrangement! Just follow the directions, take your time, and don't be nervous...you'll surprise yourself!
