Cheesy Chicken Meatballs

These were really, really good and something different to have for dinner. I used 1 egg, and probably ~1/4 c. of bread crumbs (didn't measure, just kept adding until it was the right consistency to form a ball. I also cut the crushed red pepper in half, and it was still a bit spicy for my 6 year old. I served it with Alfredo sauce and noodles (drizzling a bit of the Alfredo sauce over the meatballs) and they were a hit. Will definitely be making again! Thanks for sharing.

Chicken Salad

I LOVE this chicken salad! LOVE! I've made it several times. I make it as written, but have used both green and purple grapes. I love to eat it as more of a spread on wheat crackers. YUM!

Slow Cooker Carnitas

This was really good. As per other reviewers, I doubled all the spices except the cinnamon (used the listed amount). We used the meat on tortillas with some sour cream, lime and salsa with Mexican rice on the side. Great meal!

Chicken and Gnocchi Soup

This soup was AMAZING! So simple, yet so flavorful. We absolutely loved it. I made it as written (using the cornstarch/water), except used fat-free 1/2 and 1/2. It was sooooo good! This one is a keeper. Thanks!

This was pretty good, although I think it might be better tomorrow after it's had a chance to sit and let all the flavors develop. I also used kale instead of spinach.

Crab Cakes Chiarello

I've tried several crab cake recipes and this is our favorite by far. I like the fact that they are baked because it fits into the diet a bit easier. I also use light mayo and they turned out great.

Manicotti Alla Romana

This was outstanding - both my husband and I loved it. I followed the recipe exactly, and while it was time consuming, it was a great meal to prepare while having some wine and conversation. Just as a personal preference, the next time I make this, I'll probably decrease the amount of red sauce on top - but that is only because the white sauce is so good!

Greek Chicken Burgers with Feta

These were really good! I followed the recipe exactly, except cooked them indoors in a skillet (too windy to grill). I used a sandwich thin for the bun, and like a previous reviewer, I spread some roasted red pepper hummus on the bun and some lettuce. I would have put money on my 5 year old not eating this, but he gobbled it down. That says a lot! Thanks!

Burgundy Pork Tenderloin

This was so, so good! And this recipe literally cannot be any easier. It seemed so fancy for A Tuesday night dinner! It cooked perfectly in the 45 minutes. Like the previous reviewers, I omitted the celery and onion (used onion powder) and used 1 c. wine/1 c. beef broth. I also dumped the pan juices into a saucepan with the gravy mix to bring to a boil to thicken the gravy. My son gobbled down 2 helpings and my husband loved it. Thanks!

Garlic Mashed Potatoes Secret Recipe

These were delicious! I scaled it for 6 servings. And although I hate to alter the recipe the first time I make it, I did roast the garlic beforehand and only used half the butter (because 2 sticks seemed like an awful lot for 6 servings). I also added milk after mashing everything, only because we like mashed potatoes a litte creamier. Will definately be making these again.

This was a good ham recipe - and it really couldn't get much easier. I did add some peas for color, used reduced fat soup and cheese, and didn't have pimento. Great quick meal for a weeknight.

Val and Jess's Vegan Avocado Dip

This was excellent. It was nice to have something so fresh tasting. I was slightly worried about the avocado turning brown, so I mixed everything else together at let it chill in the fridge for about 8 hours and added the avocado just prior to serving. But, as I found out the next day, the avacado does stay green (must be the lemon and salsa). Thanks for sharing!!
