Artichoke Salsa
I basically used this recipe as an ingredient guide-- i used at least 8 plum tomatoes, a can of olives, a can of artichoke hearts... Just served it at a party and it's all gone.. My fiance threatened to leave me if i don't make it again-- This is more a bruschetta topping than a salsa in my opinion so I served with baguette and wet mozzerella-- would also be good if you added capers to it (or subbed for olives)

Asian Coleslaw
Love the dressing minus the ginger (eeew ginger)- I tend to shred cabbage and the add to it green onions and whatever crunchy veggies I have on hand-- I sometimes marinate some chicken thighs in the dressing and broil them and top the salad with them-- really yummy addictive taste..

Hungarian Mushroom Soup
This recipe is nice and rich- i tend to double the amount of mushrooms in it because we love mushrooms- i use low fat sour cream and more dill than called for-- really interesting flavors and don't skip the lemon and parsley at the end-- they really serve as a great flavor balancer-- love the layers of flavor in this one.
