Cousin Cosmo's Greek Chicken
My husband loved it!! I, too, browned garlic in the oil prior to browning the prepared chicken. I also rolled the flattened chicken with the feta filling. It looked 'fancy' on the plate. When serving I sprinkled a few cold chopped tomatoes and fresh spinach on top. The contrast between the cold topping and hot dish was good. Am serving this dish to a party of 6 in a few days.

Sausage Egg Casserole
I've used this many times when I have a house full of company for holidays, family events, etc. They even ask for it now when they are visiting. I also used fat-reduced sausage and lean bacon - no loss in flavor. I do recommend a lower oven setting and longer cooking time. It sets better in the middle without burning on top.

Baked Spaghetti II
I added some sauted garlic to the dish. It's great to take to a 'pot luck' or I usually use it for one of our church family who has someone in the hospital or is home sick and can't cook. It's quick, easy, no mess and can be reheated. With a piece of garlic bread and a salad, it's a complete (and easy) meal.
