Italian Creme Layer Cake
I made this for a friend's birthday and it was a huge hit. It is a very dense and rich cake. I doubled the frosting because I needed more to fully frost the cake. I will definitely use this recipe again.

Mom's Island Treasures
These cookies were a big hit when I brought them for my co-workers. I used bittersweet chocolate instead of milk chocolate because it was what I had on hand. The pecans really complemented the other flavors in these cookies. Very tasty!

Coconut Muffins
These muffins turned out very moist and fluffy. The consistency was perfect. I followed the directions exactly other than adding 1/2 Cup of Coco Lopez(cream of coconut) instead of coconut extract and using soymilk instead of milk. The topping is delicious also. Thanks for the excellent recipe!
