About this Cook
Married for 2 years now. No kids but waiting for the day. Full time 911 dispatcher and part time college student. Big nature lover! In the summer I disappear to the mountains and don't come back until the leaves start falling.
My favorite things to cook
Desserts. I have a huge library of dessert recipes that I love. I'm working on practicing meal recipes now that I'm married ;) I also love cooking vegetables that I've grown in my veggie/herb garden. This summer I made refrigerator pickles, salsa, zucchini bread, green beans, carrots in dill, beets, squash, and lots of other veggie dishes. There's something very satisfying about growing and then cooking your own food.
My favorite family cooking traditions
On easter we make something we call 'Birds Nests'. Baked with coconut, shredded wheat, and butter pressed into tinfoil and shaped to resemble birds nests. After baking and cooling, we add red and green grapes (eggs), yogurt, and strawberries. Very fun Easter breakfast!
My cooking triumphs
Making most of thanksgiving dinner for my husbands' dad, brother, and grandpa who all live alone. They would have just had turkey and mashed potatoes without me. They loved everything I made and thanked me over and over.
My cooking tragedies
Flan! I've tried every recipe on this site and cannot get it right! The cream cheese makes it too thick and heavy. The heavy cream leaves fat deposits on top of my flan. And I've burned myself everytime trying to maneuver the water bath in and out of the oven without spilling the water into the flan (which I sometimes do anyway). I finally gave up trying to make a flan I like and just buy the three-dollar-a-serving-stuff at the local mexican restaurant. Wish I could make mind like they make theirs! :(

Raspberry Cake
Try this delicious alternate frosting instead! Makes the cake MUCH better I think. 1/2 pkg of powdered sugar 1/2 cube butter softened 1/2 pkg frozen raspberries and a bit of the raspberry juice pinch of salt 1/2 tsp vanilla I rarely give stars - and I'm giving 5 stars! 6 if I could! I'm surprised this doesn't have more reviews!

Sage Pork Chops
Very flavorful! I like the complex flavors using such simple ingredients. I'll make these again for sure.

Garlic Mashed Potatoes Secret Recipe
I've made these potatoes twice - once following the recipe and once with my own modifications. The original recipe calls for crushed garlic, which is too apparant in creamy mashed potatoes. I hated biting into bits of garlic right in the middle of a smooth bite. Instead I used water from the potato pot (to retain nutrients) + some whipping cream + butter + oregano + garlic powder + lemon pepper (just a bit) + salt. VERY perfect flavor. I'll make these from now on this way.
