I own a gym in a beautiful little retirement town. I work long hours, so finding quick, healthy things to cook are important.I like to cook for special occasions and on camping trips as well. I run and exercise a lot.
My favorite things to cook
Sugar free cranberry sauce and anyting with any kind of berries.
My favorite family cooking traditions
Pumpkin bread, that I now have made low fat and with Splenda. Many of my traditions I have changed or deleted for health reasons. My family make wonderful breads and desserts. I just enjoy the memories, and sugar free flavors when possible.

Pork Tenderloin Stew
I hesitated 5 stars only because I didn't have all the ingredients listed, so I modified, but I'm amazed at how it turned out enough, that I will try it with the ingredients. As always, I enjoy recipes that are flavorful and healthy. The flavors were wonderful. I added garlic herb seasoning and balsamic vinegar since I didn't have apple cider. I didn't have mushrooms or celery, so I used zuchinni. I think lots of different kinds of vegetables would work well. Those darn carrots though. Next time, I will pre-cook the carrots some. I don't like undercooked carrots. Very happy with this basic recipe that works well as a foundation for a really different kind of stew.

Japanese-Style Cabbage Salad
Absolutely what I was looking for. I had to use white vingegar because I was out of rice vinegar. And I was almost out of sesame oil. So I used half that and half sunflower oil. I also addes fresh mandarin oranges. But I think the recipe would have been wonderful as is. Thank yo so much. Fantastic. I will be taking it to a simple dinner this afternoon, where they will be serving an oriental chicken soup.
