Reuben-Pierogie Casserole

I made some mistakes & adjustments, so not quite ready to review properly yet - giving a neutral so as to not skew the numbers. Wanted to log in now with a warning: single layer of perogies ONLY. Any that get "doubled up" become raw slimy pieces of dough. Willing to try this again properly and re-review.

Cantaloupe Crunch

Can I give this more stars, PLEASE???? Followed the recipe exactly - it was done 15 minutes ahead of schedule, but that just might be my oven. Tastes like peach or apricot - you'd never guess it was cantaloupe!

Brussels Sprouts with Pecans

I'm afraid I can't get on board with the "best veggie dish EVAH!" comments, but it's certainly a nice twist - better tasting after it's cooled down and settled a little, as opposed to fresh from the pan.

Chicken Stir-Fry

Made it "as is" and it was pleasant enough - was actually much tastier the next day! The coating in a baggie with cornstarch and then adding the wet ingredients is BRILLIANT - so much better than adding the cornstarch at the end. My only complaint is that it is a teeny bit bland/generic -- looking forward to ramping it up with different veggies and spices. 5 stars for the process + 3 stars for the end result = 4 stars all over.

Basic Guacamole Dip

YUMMM! The first time I made it following the recipe, and it was ok. Not overly interesting, but certainly tasty enough. The second time I took the posted advice and used lime juice instead of lemon, and a few shakes of dried cilantro - that made it pop!

OM NOM NOM. Followed another reviewer's suggestion & put 1/2 cup of water in with the roast to stop things from sticking. Might try giving it a quick browning next time.

Zippy Green Beans

Om nom nom!! I would only make two observations: (1) The frozen beans I used cooked in about 4-6 minutes, and would have dissolved in 10. (2) When served piping hot, the vinegar fumes coming off the dish are overpowering, but left to set for a few minutes the sweetness comes through - the colder the dish, the sweeter the taste.

How easy and tasty is this? Even a kitchen clod like me was able to get it right. Would like to try it with ground turkey and a wild mushroom soup instead of the veg. It even tasted nice right out of the pot without baking and cheezing. Sort of a do-it-yourself hamburger helper.

Carnitas Filling

WOW. How easy and tasty was this???? Took some advice from previous posters and seared the meat first - some spice rub on hand and tossed it in that. Next time I don't think I'll bother pulling it for rollups, but will just serve it as a chunky stew with some sourbread. Picky hubby yummed it up - woo hoo!

Cafeteria Carrot Souffle

YUM!!!! Boiled the carrots for 1 hour as suggested and cooked for 45 minutes for a soft moist dish. Could have let it got to an hour for a nice crispy top. Also halved the sugar and added a pinch of pumpkin spice as per others' suggestions. Looking forward to trying with splenda and eggbeaters for a healthier option. Doesn't need the confectioner's sugar.

Ground Beef Stroganoff

Made sure the beef was drained thoroughly and it was just fine. Used fat-free Miracle Whip which made it healthier, but surprisingly sweet. Next time I'll use MW low-fat instead of no-fat. I think it would be a good place to hide bell peppers or other veggies that need using.

Fried Rice Restaurant Style

How simple was this??????? Of course, I didn't have everything on the list - used a handful of mixed frozen veggies instead of what's listed on the recipe, but it still worked wonderfully. Used the suggestion to add some oyster sauce - yum!
