Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze
4* - so easy to make, just have to have ingredients on hand. We were missing bbq sauce, used sambal asli (asian hot sauce) instead along with apricot jam (heated up) with cilantro, lime juice, garlic powder, fresh grated ginger. Didn't have time to let the spice sit, so just seared it straight away and it was fantastic! seared in a pan on high and then put into the oven at 350 F for 20 minutes......perfection. Served with bok choy/red onion/red pepper/celery and garlic stir fry and oven roasted/fried potatoes (as per someone's suggestion)

Chicken Pot Pie IX
I always hesitate to make pot pies as they're too much work. This is really easy, I had cooked an extra chicken (in the oven) a couple of days ago, deboned it, and followed the recipe. I actually doubled it as I also cooked a package of thighs in the oven today. Chopped it all up, cooked the veggies in micro and some in pot, mixed chicken and vegs all together in a big bowl and made 1 huge, family size pie and one that fed four of us (adults) with a salad on the side. I must admit, I tweaked it with some patak's mild curry and a little powder curry, hadn't read any reviews so just did my own thing. I was delicious and we're looking forward to the big one I froze. Oh and I used a puff pastry (ready made) frozen one, rolled thin and it puffs up :) didn't make a base, just put it on top...

Pan-Poached Alaskan Salmon Piccata
Good healthy dish. I think I added too many capers, would go easy on them next time. I looked to see if anyone had added any fresh dill and couldn't see any results. I decided not to add any .. this time. Think I will next time instead of the fresh parsley. I liked this, but well, maybe it was the salmon I used, but I wasn't crazy about it. It is however an incredibly easy recipe and results are good.
