I have been married for almost five years now and have an almost six year old little boy and a one year old little boy that I stay at home with during the day. I have my nursing degree but have decided for the time being to focus on family (and that means lots of cooking time :) )
My favorite things to cook
We love southwestern food, mexican, soups and italian. Recently I have been on a quiche kick but that may just be the babys desires.

Christmas cookies and halloween cupcakes-not to mention the awsome fun birthday cakes!
My cooking triumphs
The first real meal that I cooked was stuffed peppers and I was very intimidated by them. Them came out great however and that gave me the courage to try many other things since then.
My cooking tragedies
Peanut pumpkin apple soup. Don't even really know why I thought that this is something that would be good but I kept thinking that if it was as bad as it sounded they would not put it in a cookbook. We ended up throwing the soup out and eating fast food that night.

Downeast Maine Pumpkin Bread
I made this recipe exactly as stated and it was exactly what I was looking for. I made one load and 12 muffins as I only have one loaf pan and that seemed quicker. I will be doing this recipe again and trying some of the reviewer's suggestions of subing in some applesauce for some of the oil to lessen the calorie damage done when I inhale the loaf and will probably be playing around with additions of nuts, raisins and chocolate. This is a keeper!

Pumpkin Chili
This was a tasty very mild chili. I didn't end up added the extra sugar as I tasted it after adding the pumpkin pie spice and the chili and thought that it was sweet enough. I also ended up increasing the chili powder alittle bit and threw some cumin in just to amp up the chili flavor. I served it on Halloween and all in all everyone there thought it was pretty good-although no one was really able to taste the pumpkin in it.

Caramel Apple Pork Chops
This was tasty and different than anything that we had tried before. The apples were amazing and throwing the pecans on top was an extra bonus. The pork was good but the apples were the star. It smells like fall!
